It finally stopped raining long enough here in Kentucky for us to cook out on the 4th of July. We had some wood under cover, thankfully, as it was slow going building a fire to cook on. Note to self: make sure the guys put kindling under cover, too!
While the guys were getting the fire started, I threw together a quick Ranch Pasta Salad.

I only had one fresh tomato, and I wanted to slice that for burgers. So I used canned tomatoes. It tasted just fine, and you couldn’t really tell the difference. Next time, I will drain the canned tomatoes more.
I used rotini pasta, sliced green onions, canned tomatoes, ranch dressing, and parmesan cheese. A cucumber would have been nice in it, too. I will definitely be making this again so I can try it with a cucumber. And, you know, writing down what I actually put in it, so I can share it with you! lol
Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner?
Saturday – quick & easy- Hamburgers, hot dogs, ranch pasta salad, baked beans, chips
Sunday – soup & sandwich day – Chicken tenders, baked beans, corn
Monday – chicken – Baked Chicken breasts, rice, salad
Tuesday – pizza/pasta – Spaghetti with homemade meat sauce, green beans
Wednesday – Taco Night- beef or chicken – Chicken Tacos with all the fixings
Thursday – chicken – Chicken Curry with carrots and broccoli, rice
Friday – beef – Fish fillets, oven roasted potatoes, carrots
