There used to be this show on TV back in the 90’s called Home and Family. It was on every day for 2 hours. I loved that show! I loved it so much, that I took notes every day. lol I wrote down recipes, tips, crafts, notes from interviews with doctors and others. I have 2 notebooks full of notes! lol
This recipe is from one of those notebooks. It’s dated 8-18-97. Doesn’t everybody date their tv show notes? I love the way this dish tastes, it’s just delicious when all the flavors blend together.
2 -2 1/2 lbs chicken, cut up
2 white onions, thinly sliced
8 large potatoes, quartered
2 T oregano
1 c. parsley, finely chopped
salt & pepper to taste
Boil the chicken pieces for 30 minutes, drain. Put 1 inch of olive oil in bottom of baking pan.
Add the chicken and the rest of the ingredients. Mix well with your hands.
Bake at 350 stirring often (every 15 minutes. Cook for 1 hour, until potatoes are nice & crisp. You can cover with foil for the first part of the cooking.
This makes a flavorful one pan meal.
