It’s been a busy week in my kitchen. I decided to make myself some gluten free snacks. I made Gluten Free Chocolate Oatmeal Cookies and Gluten Free Applesauce Gingerbread. By the way, I’ve linked all my gluten free recipes on one page. You’ll find it in the menu bar above. I took pictures, but now can’t find them. I think they are on my husbands cell phone. The applesauce gingerbread is great alone, but awesome paired with homemade whipped cream.
Yes, I beat it by hand. That’s my daughters preferred method. My arms sure are tired by the time it’s done, but it is good exercise. I made this twice this week. Once for my applesauce gingerbread, then again on Friday for the homemade chocolate pudding I made my daughter. She’s new to braces, and still experiencing a lot of discomfort some days. So on those days, she gets some comfort food from mom. Mostly homemade mashed potatoes and chocolate pudding. Sometimes you just need mom to cook for you 🙂
Before Hannah had her ortho appointment on Thursday, she did some baking. She made blueberry muffins and cranberry bread. For which the rest of the family was very thankful. This family sure does like to eat Hannah’s baking! I only took a small bite of the cranberry bread. Yummy! Makes me wish I could eat more of her baking!
You can just see a glimpse of our new bread pans in the this picture. I’m loving these Wilton Recipe Right Medium Loaf Pans. Look at the sides of the cranberry bread. They came out perfect!
Edited to Add: A few minutes ago, my husband brought me his cell phone with the picture of my Gluten Free Applesauce Gingerbread on the screen. He asked if that was the picture I was talking about. I said you’re reading the blog? Why are you reading the blog? Are you looking at the menu? He said Yep, and it’s looking good, too! roflol I guess that means he approves of this weeks menu. lol Here’s the picture of the Gluten Free Applesauce Gingerbread with my homemade whipped cream on top.

Sunday – soup & sandwich day – Homemade turkey soup with homemade bread
Monday – chicken – Turkey, baked sweet potatoes, cauliflower, salad
Tuesday – pizza/pasta – Spaghetti with meat sauce, green beans,
Wednesday – beef – Meatloaf, mashed potatoes, corn on the cob
Thursday – chicken – Turkey, yellow squash & zucchini baked with ranch dressing, mashed potatoes
Friday – Sabbath Dinner – Turkey, potatoes, carrots, and onions in the crockpot
