I made oven Roasted Chicken and Vegetables last week. I’ve made variations of it before, and it always comes out good. The family loved it, and ate it all!
While I was outside working on garden stuff, my 28 year old son decided to make chocolate chip cookies. He found the recipe we use, with the ingredients on the front of the card, and the directions on the back. Except he didn’t know the directions were on the back. lol So he assembled the ingredients in his own interesting way. lol I walked in to find him using a potato masher to mix everything together. He put the dry ingredients in the bowl first, then added the shortening and butter, and was using the potato masher to mix it all together! lol
Surprisingly, they were edible. lol

In other kitchen news, yesterday was Easter and we hosted dinner here for family. There were 12 people all together. I served a spiral sliced ham, (bought on sale!), scalloped potatoes, asparagus, corn, Resurrection rolls, cresent rolls, and banana pudding for dessert. My mother contributed stuffing and macaroni and cheese.

My daughter made the white sauce for the scalloped potatoes, and I assembled it. There were so good!
The asparagus was store bought, as it is not ready in our garden yet. It was still good, though!
Resurrection rolls are always so good. It seems like I can never make enough as they are always gone. We made 24 Resurrection rolls, and 8 regular crescent rolls. Only one of each kind was left over! I’m totally NOT going to do the math to see how many each person averaged! lol
I made Banana Pudding for dessert! Well, my daughter made the homemade vanilla pudding, and I assembled the dish. Believe it or not, this was the first time I made it! My mother couldn’t believe it. lol It’s such a popular dessert here in Kentucky, I’m not sure why I waited so long to make it.

Saturday – quick & easy- leftovers
Sunday – soup & sandwich day – Ham, scalloped potatoes, asparagus, corn, resurrection rolls, banana pudding
Monday – chicken – Chicken curry with carrots and broccoli
Tuesday – pizza/pasta – Pizza with homemade garlic crust, turkey pepperoni, onions, and peppers, Ham and pineapple
Wednesday – beef – Cincinnati Chili, green beans
Thursday – chicken – Turkey a la Mama over homemade biscuits
Friday – beef – Venison, potatoes and carrots in the slow cooker
