Cooking Day

I just had a cooking and baking day last week, but I need more meal starters in the freezer. It makes meals so much easier when you can pull out parts of the meal that have already been cooked.

I often make completed meals for the freezer also. Lasagna, meatloaf and the like. I like having the meal parts frozen separately so I can mix them up to make different meals.

Here’s what I’m going to make today:

Brown rice
White rice
Kidney beans
Great northern beans
package up chicken broth that I made on Tuesday
debone and package chicken that I cooked on Tuesday

Yesterday, when I was cooking the meat for spaghetti, I cooked extra and put it in the freezer.

One 3 cup bag
One 4 cup bag

I will be happy to have all these in the freezer, just waiting for meal times.

UPDATE 4:30 – the brown rice, white rice, kidney beans and great northern beans, are all cooked and bagged. I’m going to debone the chicken now, then get it and the broth bagged.

I’ll be back later with a final count and pictures.

UPDATE 7:45 – I ended up using some of the chicken and broth to make soup for supper. Frozen veggies, and cut up leftover baked potatoes make a quick soup.


Here’s the count:
3 – 2 cup bags of Great northern beans
3 – 2 cup bags of kidney beans
2 – 2 cup bags of brown rice
2 – 3 cup bags of brown rice
2 – 4 cup bags of brown rice
1 – 2 cup bag of white rice
4 – 3 cup bags of white rice
3 – 4 cup bags of white rice


1 – 4 cup bag of diced chicken
2 – 3 cup bags of diced chicken
1 – 4 cup bag of chicken broth
1 – 8 cup bag of chicken broth

I’m glad to have those in the freezer. Next week, I think I’ll try to get some assembled meals in the freezer.

Cooking and Baking Day

Today is going to be a cooking and baking day for me. Since I’ve been sick, my families nutrition has really suffered. The kids haven’t been eating enough fruits and veggies, and have been eating more store bought snacks. I normally try not to buy snacks that I can make myself. I need to get our family meals and snacks back on track. Homemade snacks, even though they still have sugar in them, are much better than store bought with all the artificial colors, flavors and preservatives.

I got a head start last night by making banana muffins. We ate a few for breakfast, but I still have 18 to put in the freezer.

Here’s what I’m going with today.

brownies – quad recipe in a very large pan
no bake cookies – double recipe
french toast – 39 pieces done
oatmeal raisin cookies – double recipe

UPDATE – 12:30 Brownies and no bake cookies are cooling, and I’m taking a lunch break. 🙂


UPDATE – 3:00 I made 39 pieces of french toast. And the Oatmeal Raisin cookie dough mixed. I’m off to bake that. I also need to start packaging all this food for the freezer.

UPDATE – 6:00 A double recipe of oatmeal raisin cookies made 11 dozen and 4 cookies. I put 3 dozen in the cookie jar and the rest are going in the freezer. The double no bake cookie recipe made over 100. People were eating them before I got an exact count.

Here’s a picture of everything thats going in the freezer, including the banana muffins I made last night.

I made chicken soup for supper, but I ran out of time to make biscuits, so we had crackers with it. I cooked the chicken on Monday. I like to do it at least a day ahead of time. I like to skim all the fat of the top of the broth. There’s enough soup left for another meal.

I did have some chicken helpers to get the meat off the bones. I hate that job. Unfortunately, so do they.

I had a very successful cooking and baking day. I need to do meal starters another day. I need to cook and freeze a few different kinds of beans, and get some cooked meat in meal sized packages.

No Bake Cookies

No Bake Cookies

2 cups sugar
1/2 cup cocoa
1/2 cup milk
1/2 cup butter
1/2 tsp vanilla
2 cups oatmeal
3/4 cup peanut butter
1/4 tsp salt

Put first four ingredients in pan. Boil for 1 and 1/2 minutes. Remove from heat, then add the remaining ingredients. drop by spoonfuls on waxed paper and cool.

The Secrets of Jonathon Sperry

Have you heard about this new movie? The Secrets of Jonathon Sperry is a Christian movie about 3 twelve year old boys and a 75 year old man set in the summer of 1970.

We are really looking forward to seeing this movie. So far, the nearest theatre that is showing it is an hour away. You can check HERE to see if it’s playing near you. They are adding more theatres weekly, so I’m hoping it comes to one closer to us. If we have to, we will probably drive the hour each way to take the kids to see it.

The Rules of Chocolate

If you’ve got melted chocolate all over your hands, you’re eating it too slowly.

Chocolate covered raisins, cherries, orange slices & strawberries all count as fruit, so eat as many as you want.

The problem: How to get 2 pounds of chocolate home from the store in hot car.
The solution: Eat it in the parking lot.

Diet tip: Eat a chocolate bar before each meal. It’ll take the edge off your appetite and you’ll eat less.

A nice box of chocolates can provide your total daily intake of calories in one place. Isn’t that handy?

If you can’t eat all your chocolate, it will keep in the freezer.
But if you can’t eat all your chocolate, what’s wrong with you?

If calories are an issue, store your chocolate on top of the fridge. Calories are afraid of heights, and they will jump out of the chocolate to protect themselves.

If I eat equal amounts of dark chocolate and white chocolate, is that a balanced diet? Don’t they actually counteract each other?

Money talks. Chocolate sings.

Chocolate has many preservatives. Preservatives make you look younger.

If not for chocolate, there would be no need for control top pantyhose. An entire garment industry would be devastated. You help keep the economy moving. Be proud.

Put “eat chocolate” at the top of your list of things to-do-today. That way, at least you’ll get one thing done.

Why is there no such organization as Chocoholics Anonymous?
Because no one wants to quit.

Christian Satellite TV

We had our cable turned off at the end of June. D and I were happy. The kids? Not so much. We were tired of paying for junk that we refused to watch.

We lived, very nicely, without tv for about 3 weeks. We do have lots of dvds, so we did watch those.

Ah, then our new Glorystar Satellite arrived, and D got it installed.

We are so happy with it! There are over 50 Christian channels. A good portion of those are in foreign languages, though. We have 12 channels that we watch regularly. From Daystar & TBN, to Smile of a Child for the little kids and JCTV for the teens.

You may think 12 channels aren’t very many. Count how many channels you actually watch and how much you’re paying for them. I read news online, check the radar online, and can watch the local news online. I can even carry on a current events conversation with people, and I usually know everything that know about it. Yes, the kids have even watched programs from the mouse channel a few times. They rarely watch anymore, they have plenty of programming on the satellite that they like and we don’t have to worry about what they are watching!

When we had cable, most of the time, there wasn’t anything on worth watching. Now? We can always find something worth watching.

And get this! There are NO monthly bills! You buy the satellite and box. Then the programming is FREE!

Ridiculous Food Labels

It just amazes me that food companies can get away with deceptive labeling. What happened to the FDA? They must all be napping, all tired out from eating all the junk food that they have labeled as “healthy”.

We don’t buy very many processed foods and we always read the labels carefully. We read the ingredients, and not just the front of the box. The kids even turn the boxes over and read the ingredients. 🙂

Labeling food “trans-fat free” when there IS actually trans-fat in it, is the one that bugs me the most.

We should be able to pick up a box, and find out what’s in it, without being detectives.
