Ever since D was diagnosed with diabetes, I have struggled with how much meat we use for each meal. D is a big meat eater, as are the kids. Me not so much. Being big meat eaters doesn’t fit so well with frugal meals.
But I have finally found a solution!
Now when I make a casserole I don’t double up on the meat, I use a smaller amount, but serve D extra meat. For example, if I’m making a chicken casserole, I use about 2cups of chicken for a 13 x9 inch pan. I serve D a chicken leg quarter, and use the casserole as a side dish for him.
He gets full, doesn’t carb out on the casserole, and I still get a frugal meal!
