In the Kitchen with Linda & Dinner Menu

We had Snowmaggedon arrive here in Kentucky last week. My husband wasn’t even able to get out to work for 3 days. We knew the storm was coming, so I prepared a lot of food ahead of time. We also made a large pan of brownies, and chocolate cookies for snacking.

We ended up not losing electric, thankfully, so I was able to cook more during the week. One thing that I made was a homemade Boston Cream Pie. I’ve eaten it many times, I’m from Massachusetts, but I had never made one before. It came out really good!

Doesn’t this look yummy?! It was! lol Too bad it’s gone now. I would love another slice! Oh, I used this recipe for Boston Cream Pie.

While it may look perfect, check out the back. For some reason that was a lot more frosting than there was cake. lol When I poured the frosting over it, it ran down the back, around the plate, and onto the counter. I didn’t get a picture of the counter, and I cleaned up the edge of the plate for the picture. But I sure made a mess! lol

Boston Cream Pie

My family sure can eat a lot when they are all stuck in the house, bored. lol So I ended up having to cook more than I normally do. One day, I made pancakes and turkey bacon for lunch. This big pile of pancakes, plus 3 than my son had already put on his plate were soon gone.

I baked the bacon. It’s so much easier than frying!

 

 

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner?

Saturday – Sabbath- Jag, fried corn – my husband cooked!

Sunday – soup & sandwich day – Homemade vegetable soup

Monday – chicken – Roasted Turkey, homemade stuffing made with homemade bread, homemade gravy made with homemade turkey stock, green beans, cranberry sauce

Tuesday – pizza/pasta – Pizza, cooked carrots, chicken strips for the one that won’t eat take out pizza

Wednesday – beef – Taco baked potatoes, applesauce

Thursday – chicken – Roasted Turkey, gravy, twice baked potatoes from the freezer, beets

Friday – beef – Venison, potatoes and carrots in the slow cooker
