It’s cooking day here! I haven’t cooked very much over the summer. I haven’t baked more than chicken, and some brownies this summer. But now that fall is almost here, I need to restock the freezer. I had to start with all the veggies waiting to be dealt with. This is what I put in the freezer this morning:
12 cups of grated zucchini
12 cups of sliced zucchini
10 cups of sliced yellow squash
That’s a lotta squash! lol I put 20 cups of sliced yellow squash in the freezer a couple of weeks ago. *FYI* zucchini can be frozen raw, to be used in cooked dishes. The yellow squash has to be blanched before freezing. *end of freezer cooking lesson* 🙂
Now this afternoon, I have to do green beans! I also kept out some grated zucchini to make bread. Hopefully, I’ll get to the banana bread this afternoon, too. I need a few snacks to make a little buffet tonight.
It’s the opening ceremony of the Olympics tonight! YEAH!! So we’ll all hang out in front of the tv tonight, eating, and getting ready for the next two weeks. Is anyone watching with me?!
