Butterscotch Blondies

I got this recipe in the mail from the grocery store a few years ago. These are really good. They’re great for taking to pot luck dinners where they always seems to be an abundance of chocolate. Since the ingredients are ones that are normally kept in stock, these can be whipped up quickly at the last minute.

Butterscotch Brownies


1/2 cup butter (1 stick) softened
2 cups light brown sugar, packed
2 eggs
1 1/4 cup all purpose flour
1 tsp. baking powder
1/4 teaspoon salt
1 tsp vanilla
1/2 cup nuts (optional)
2 tbs powder sugar (optional)

Cream the butter and brown sugar in a mixing bowl. Add the eggs and beat well. Add the flour, baking powder, salt and vanilla (and nuts, if using) and mix well.

Spread into a greased and floured 13×9 baking pan. Bake at 350* for 20-25 minutes, or until a toothpick inserted comes out clean.

Cook completely. Dust with powdered sugar, if using, and cut into squares.

What’s For Dinner?

While planning this weeks menu, I asked the family for suggestions. What should I do with the beef? “Cook it!” was the answer I got. lol

Saturday – pizza night – Homemade Cheeseburger Pizza, bread sticks, carrot sticks

Sunday – soup & sandwich day – Bean Soup

Monday – chicken – Roasted Turkey, mashed potatoes, green beans

Tuesday – beef – Homemade chili, corn bread

Wednesday – super simple – leftovers

Thursday – chicken – sliced turkey, oven fries, yellow squash

Friday – Friday Night Fire/Beef – Steak, broccoli, challah bread

Our Homeschool Week in Review

The highlight of our homeschool week was snow… and more snow….and more snow. And the cold! Today finally got above freezing. Is winter over yet?

 

I think the cats are telling me to get rid of the snow!

Oh, yes, we have yet another cold running rampant through the house. That makes for some pretty miserable kids.

Normally, we let the sick child have off school. Since we’ve had one cold after another for several months now, I’m wondering if I should rethink this. Of course, the kids are not. lol

Despite the sickness, and the snow day that we had on Wednesday when Dad was home because he couldn’t get out to work, we did manage to get some school work done.

The living room continues to be the favorite room in the house for working.

She looks warm and cozy.

We finished the 3-D puzzle from that we started last week. We now have another puzzle started on the schoolroom table.  We like having one out  all the time. People (including Mom & Dad) go over when ever whenever they feel like working on it. More often than not, when one person is working, others come join the fun.

Fingerless Gloves

My hands get so cold in the winter. Wearing gloves works, if I’m not doing anything. When is a mom ever not doing anything? So when I can across the pattern for these Toasty Mitts, I knew I had to make some.

I love them! I did adjust the pattern to fit my hands, as I have small hands. I could only get a picture of one, since everyone else is in bed. But my other hand looks just like this one. 🙂 Apparently, I can take pictures without my glasses, as their laying on the laptop!

I am now making my daughter a pair.  Although, since the pattern is easy to follow, she could make her own.  Even if you can do something yourself, it’s still nice to have Mom do it for you sometimes. 🙂

I love wearing my fingerless gloves while on the computer! They keep my hands toasty warm, so my fingers stay limber for typing fast. lol

My Review:


Two of my kids read this book themselves, and I read it out loud to one. This book has a nice little story line. I enjoyed reading it out loud. We all loved the illustrations. God Gave Us The World is a hardcover book, that I think would make a great gift.

The last page of the book shows the other books in the series. My kids requested that I get them all. I think wanting to get the other books in a series is the highest praise a book can get.
