This recipe came from my husband’s family. They got it from a lady from Portugal when she made it for them. They said she made hers with fish.

2 Tablespoons butter
1 onion, diced
1 can kidney beans, drained
1 can great northern beans, drained
1 pound linguica, smoked sausage, kielbasa or your favorite meat sliced or diced
1 package hot dogs
4 cups rice, long grain, par boiled
8 cups water
2-4 beef bouillon cubes
salt and pepper to taste
Saute onions, hot dogs, and meat until browned. Add beans, rice, water and seasonings. Bring to a boil, reduce heat and simmer covered until the rice is done. Usually 30 minutes.
This is such a versatile dish. You can use whatever beans, vegetables and meat you want. You can even leave out the bouillon cubes. It still tastes great. If your using chicken, you can put in a little poultry seasoning. If your want more meat, use it, it will still come out fine. Does the recipe make too much? Use less rice and water, 2 cups rice and 4 cups water.
You can add celery, green peppers, cabbage, potatoes, chicken, hamburger, fish. Really, any vegetables and meat that you like can be put in. Have leftover meat and veggies you want to use? Throw them in the pot, too!
