Cinnamon Apple Banana Bread

I just made this today.  I tasted it so I could tell you how it was, even though I’m not supposed to eat wheat. It’s sooooo good! I’m definitely going to have to make a gluten free version!

Linda's Lunacy Cinnamon Apple Banana Bread

1 cup sugar
1/2 butter, softened
1 egg
1 tsp vanilla

3 very ripe bananas
1 teaspoon baking soda
1 teaspoon cinnamon

1/2 teaspoon nutmeg
2 cups flour
2 apples, peeled, cored, and chopped.

Preheat oven to 350. Grease 2 bread pans.

In a large bowl, cream sugar and butter together. Add egg and vanilla, mix well. In another bowl, mash the ripe bananas with a fork, then add to the sugar mixture.

In a separate bowl, mix the baking soda & flour together. Add flour mixture to sugar mixture. Mix until all ingredients are moistened. Add chopped apples, stirring until they are incorporated into the batter.

Bake at 350 for one hour, covering the tops of the pans lightly with aluminum foil. Remove the foil, bake for 10 more minutes or until a toothpick  inserted in the bread comes out clean.

Came out good and am making some more tonight to use up the bananas in the freezer. I have one apple left and then will sub in some shredded zucchini and nuts. Simple, easy and good.

  20. To some, bread is a classic comfort food. I personally can’t eat much bread because it gives me trouble. I get terribly bloated and full for the rest of the day. That’s after one slice.

  21. Lisa Coomer Queen says:

We have bread at every meal. Probably shouldn’t but we do. This will be a great addition!

  24. The bread looks a bit dark. I suppose it’s from the cinnamon. This would be good with a glaze or cream cheese frosting.

  61. Shaunelle says:

Ingredients calls for cinnamon and nutmeg but does not tell you in the directions when to add them. I added mine with the flour. It’s in the oven now. We’ll see!

  62. Does anyone know if this bread freezes well and for how long? Would love to make some for the upcoming holidays. Thank you!

    • Linda @ Linda's Lunacy says:

Hi Karen, I freeze banana bread all the time. I don’t recall freezing this recipe, my family eats it too fast. lol But I’m sure it will freeze well.

  63. Can this be adapted for a bread machine?

  64. Have this in the oven now! The processes was super easy and it smells amazing! Can’t wait to dig in with some vanilla bean ice cream!

  65. The recipe says “1/2 butter”
Half what? Half a stick? Half a cup?

  66. I have little loaf pans (little bigger than muffin pan &loaf shaped) each little loaf enough for 2. I used these and just watched the timing to bake (took approximately 45min). I love these little loafs because they’re easy to freeze & even share. I did add nuts to 1/2 the mixture and they were even more delicious. Great with a cup of tea/coffee or even a glass of milk. REALLY GOOD warmed in the microwave for a few seconds.

  67. butter measurement??. 1/2 of what?? Cup???

Also I grated 1 of the apples just gives it a smoother blend and chopped the other.,,,,,

  68. Has anyone made this bread in a bread machine. Would be great to be able to when you live with the Temperature is 112 most days.

  69. Hi Linda,
I just wanted to let you know that ever since I have found this recipe it has been my go too. I use kinda the basics and make it my own. This is a great recipe to do that with.
The first time I used the recipe I did exactly the way you said. Then after that I would make it different. I added raisins, chocolate chips, zucchini, and a number of other things. Thank you for this recipe.
