In the Kitchen with Linda & Dinner Menu

We were without electric for over 4 hours Tuesday evening into Wednesday. When your kitchen is all electric, things get interesting.

I did go to the store Wednesday morning and buy 80 pounds of ice to put in the fridge/freezer and my two chest freezers. Thankfully, all the food survived.

Due to my freezer stash, I didn’t have to go buy take out food for supper on Wednesday. I had cooked bbq chicken in the freezer. I thawed that, and served it on salad. An easy supper, and much healthier and cheaper than take out.

I made potato salad on Friday for our cook out. I changed up my recipe a little bit. I added more chopped onions and some diced tomatoes. Can you say use up the diced veggies in the fridge? lol It came out really good! We all liked the addition of tomatoes. Those are Chive flowers from my herb garden on top of the potato salad.

On Sunday, our three youngest teens took Dad out to eat for Father’s Day to the local Mexican Restaurant. I had a Chicken Chimichanga. I’m not very adventurous when it comes to eating out. My kids talked me into getting a chimichanga the first time we went to this restaurant. Now, that’s what I order every time we go. lol

While Abby was roasting marshmallows at our cook out, Max the dog took a great interest in the marshmallows. He was really hoping she would feed him one. lol

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner? See my menu below!

In the Kitchen with Linda – Dinner Menu:

Saturday – Sabbath- Make ahead meals- Fish filets, tater tots, and sweet potato puffs

Sunday – soup & sandwich day – Dinner out for Father’s Day

Monday – chicken –  Baked chicken, baked potatoes, green beans

Tuesday – pizza/pasta – Spaghetti with meat sauce, broccoli

Wednesday – beef – Tacos with all the fixings

Thursday – chicken – Seafood Feast – lobster tail, lobster claws, shrimp, scallops, crab cakes, boiled potatoes, corn on the cob

Friday – Leftovers, if no leftovers, then chicken, potatoes, and carrots in the crockpot
