My major accomplishment in the kitchen last week was a seafood feast I prepared for my mother’s birthday dinner on Thursday.

I prepared lobster tails, lobster claws, shrimp, scallops, crab cakes, boiled potatoes, and corn on the cob.
My stove was very busy! I made clarified butter to go along with all the seafood. To make clarified butter, you melt the butter on the stove. Skim off any foam floating on the top. Then carefully pour the melted butter out of the pan, being careful to leave the milk solids in the pan. It’s very easy to do. You can see the little condiment cups with the clarified butter sitting on the stove.
I boiled the lobster tails and claws, baked the crab cakes, and sauteed the shrimp and scallops in butter. I boiled the corn and potatoes separately, not together.
Here’s all the food on the table just waiting for everyone to sit down and eat. I held them back long enough to take a picture. lol Notice how yellow the clarified butter is.

After 7 people eating at the table, and making a plate of food to take to my father in law, this is what remained.
Not much. lol The lobster tail left was left on purpose. My mother got to take that home with her to eat the next day. If I hadn’t told everyone else they couldn’t eat it, it would have been gone too. lol
There was only one little piece of potato left, not a whole potato, just a small piece. And 3 ears of corn left. Notice only vegetables were left. lol
I had never cooked this much seafood at once before. The seafood I bought here in Kentucky doesn’t compare to the seafood we used to be able to get in Massachusetts. Cape Cod, where we’re from, is known for it’s awesome seafood. But it was a very nice seafood dinner. My mother really enjoyed herself. I’m glad, as this was her birthday present and birthday dinner all in one.

Monday – chicken – Baked chicken, baked potatoes, green beans
Tuesday – pizza/pasta – Homemade Meatball Subs on homemade french bread with Provolone cheese
Wednesday – beef – Tacos with all the fixings
Thursday – chicken – Slow Cooker Sweet and Sour Chicken
Friday – Cookout – hamburgers, hot dogs, potato salad
