Turkey a la Mama was on the menu last week. Never heard of it before? Well, there’s a good reason for that. I made it up. lol Think Chicken a la King, then sub in other veggies. And turkey.
I don’t have a real recipe. I take my broth, made from the turkey bones, the meat that was left on the bones when I made the broth, and whatever vegetables I have. If I have a lot of leftover vegetables, this is the perfect dish to use them in. Or if you have several bags of frozen vegetables with a few left in the bottom of the bag, dump them all in. Or open a new bag, or can. Basically, you can use whatever vegetables your family likes. Bring everything to a boil, when the vegetables are done, I season and thicken with cornstarch so I have a nice gravy. This can be served over rice, I used brown rice in the picture above, noodles, mashed potatoes, or even toast. This is a very frugal meal, as you can use whatever you have on hand. It tastes good, too.
Last Saturday, we had a couple of volleyball games to go to, and we wouldn’t be home for supper. We survived eating out by eating at Subway. lol Even though I wasn’t going to be home at supper time to cook, I still had to provide supper for my father in law. So I turned to my freezer. The last time I made meatloaf, I made extra and baked into individual little patties/loafs. After cooling, I froze in a single layer in a freezer bag, making it easy to pull out just what I need. I put two of those on the plate, with a big side of my home canned green beans that my father in law loves. I sent it over early in the day, and he simply reheated in the microwave when he was ready to eat. Easy, and he got a good home cooked meal, even though I wasn’t home!

Saturday – Sabbath- Make ahead meals- Dinner out after volleyball games, Sent my father in law meatloaf and green beans earlier in the day, he just reheated in the microwave.
Sunday – soup & sandwich day – Turkey sandwiches, corn
Monday – chicken – Baked Salmon, brown rice, green beans
Tuesday – pizza/pasta – Pizza with garlic crust, and homemade turkey sausage , peppers, and onions, carrot sticks
Wednesday – beef – Shepherds Pie
Thursday – chicken – Turkey, mashed potatoes, hot pepper jelly glazed carrots
Friday – Sabbath Dinner – Chili Cheese Baked Potatoes, peas
