In the Kitchen with Linda & Dinner Menu

It’s been a long time, as in a couple of years, since I made homemade English Muffins. I decided it was time to rectify that situation last week. I had my daughter mix up the dough, and I did the cutting and cooking.

I got a dozen English Muffins from this recipe.

Homemade English Muffins

I used them the next day for lunch. My husband was home that day due to a snow storm, so he helped split them with a fork. Using a fork makes for more little knooks and crannys than if you slice them with a knife.

I mixed up some egss, and poured a thin layer in my small cast iron skillet, like I was going to make an omelet. Once the first side was done, I carefully flipped it over to cook for a couple more minutes. I folded it over and topped with cheese and turkey bacon.

Then onto my english muffins for our own homemade egg McMuffins. They were so good. And very filling for my snowed in crew that likes to eat when they are bored. lol

I had some bananas that were ready to be used in cooking, so instead of making banana bread, I made a banana cake, and topped it with homemade caramel frosting. It was so good! And it went pretty quick with my hungry crew! lol

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner?


Saturday – quick & easy- leftovers

Sunday – soup & sandwich day – Homemade potato soup

Monday – chicken – Chicken curry with broccoli and carrots, white rice

Tuesday – pizza/pasta – Pizza, cooked carrots

Wednesday – beef – Tacos with all the fixin’s

Thursday – chicken – Roasted Turkey, gravy, twice baked potatoes from the freezer, beets

Friday – beef – Venison, potatoes and carrots in the slow cooker
