I just did not feel like cooking the other night. I was seriously leaning towards take out pizza. Then I remembered that I had a pack of 2 premade crusts that I got on clearance. Since I had thought ahead and bought pepperoni at the same time, I was easily able to throw together some quick pizzas. I chopped some onions, peppers, and canned pineapple. Oh, and 3 kinds of cheese! We had 2 pizzas for less than the cost of one take out pizza. I count that as a win!

I made breakfast for supper one night. There was some milk I needed to finish before it went bad, so pancakes fit. I made a package of bacon I had on hand from a sale.

Last week, I bought 3 large packages of chicken breast on sale. I packaged all of it for the freezer. Half with Italian salad dressing, and half with BBQ sauce. I just went to take a pic and realized that I had sent all but one pack out to the freezer in out storage building.
Well, it is cold in Kentucky today, and I don’t feel like walking out there just to get a pic. lol So here’s a pic of one package I left for dinner tonight. I cut all the chicken breasts in half so they would cook more evenly, and quickly. That’s why there are 4 pieces, and it’s labeled 2. lol

Now that I seasoned all this chicken, I keep seeing chicken recipes I want to try. lol But I really love the convenience of just dumping this chicken into a pan or the slow cooker. And doing a couple of quick sides. Hopefully, chicken breasts go on sale again soon so I can try all these recipes I’ve been seeing. lol

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner?
Monday – chicken or turkey – Baked Chicken, baked potatoes, fried green tomatoes
Tuesday – pizza/pasta – Cincinnati Style Chili, green beans
Wednesday – Taco Night- Chicken Fajitas
Thursday – pork or chicken – Salmon, rice, fried corn
Friday – Quick & Easy – leftovers
Saturday – Quick & Easy or Husbands Choice – Burgers on the grill, or eat out
Sunday – soup & sandwich day – Soup, sandwiches, or leftovers
