In the Kitchen With Linda & Dinner Menu

Last year, right before Thanksgiving, Ibotta was giving rebates for a whole dinners worth of food for Thanksgiving. I don’t usually make green bean casserole, so I had the bag of French Fried Onions in my pantry. I finally used them last week!

I crushed them up and coated chicken with them! It was so good!! I will definitely be on the lookout for a sale on the onions again!

I dipped the chicken breast into egg, then into the onion crumbs.

I baked them in the oven. The family loved them!

I served it with asparagus. And I don’t remember what carb we had. lol I was concentrating on the chicken lol

I got some pork loin on sale. $1.69 a pound. It used to be cheaper. sigh But everything has gone up. ugh. I cut each of the about 4 pound loins in half, put one half in the freezer whole, and sliced the other half into chops. I had 4 loins, so I now have 7 bags of pork loin in the freezer. We ate one bag of chops that night. If you can find pork loin like this in your store, it makes the most tender chops!

My husband bought corn on the cob from someone that came into his work. It was good, but the cobs were a little sparse.

Did you know that every strand of silk has to be pollinated? That’s why these cobs aren’t full, they weren’t all pollinated correctly.

I don’t know about you, but I sure have the hardest time getting hard boiled eggs to come out perfectly every time. I boiled some on Saturday for egg salad on Sunday. They came out so perfect, I had to take a picture! lol I almost wished I wasn’t chopping them up into salad. lol

Peaches were on sale, so I bought a big bag. My husband ate a few, and my daughter made cobbler out of the rest! So good! Of course, we served it with vanilla ice cream! Yummmmmmm

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner?

Monday – chicken or turkey – Chicken breasts marinated in Italian salad dressing, rice, corn on the cob, beets

Tuesday – pizza/pasta – Pasta with meat sauce, green beans

Wednesday – Taco Night- tacos with all the fixin’s

Thursday – pork or chicken – Son’s birthday, his request – Lasagna!

Friday – Quick & Easy  – take out

Saturday – Quick & Easy or Husbands Choice – Grilling! Not sure what yet……

Sunday – soup & sandwich day – Soup & sandwiches, or leftovers

The Case for Heaven Review

The Case for Heaven starts out by talking about what is is to be a human. How our brain, emotions, and free will work. Then segues into whether our consciousness is still aware when we are in a coma & clinical death, and then into near death experiences. He shares several stories of people describing their near death experiences.

He studied over 1,000 near death experiences while working on The Case for Heaven. He found that the descriptions of these experiences all had many things in common. Several people are featured sharing their experiences. Including some that talk about their near death experiences in hell.

Nobody knows what happens in those minutes before someone dies. How we live our lives, and what we do or say in those minutes before we die determines what happens after we die.

He does share his opinion of what hell will be like. How he doesn’t think it will be one size fits all, that everyone’s experience in hell will be fair, a fair comparison to how they lived their life. An interesting point of view that I haven’t heard before.

The Case for Heaven is a documentary. So there are a few slow moving parts. Overall, though, I think the Case for Heaven is very well down. And does indeed make a case for heaven.

I’m finally sharing what I’ve been up to in the kitchen again. Looks like I haven’t shared an In the Kitchen with Linda and Dinner Menu post since the end of December last year. Ugh. I can’t believe it’s been that long! Anyway, I’m back to sharing my kitchen activities.

We’ve been grilling a lot lately. So today’s pictures feature grilled foods. And a few side items.

We had grilled salmon, zucchini, and yellow squash. We had already started serving when I said, wait! I have to take a picture! lol

Sliced pork tenderloin on the grill…..

Grilled chicken and zucchini. Yes, grilled zucchini is popular here. lol

The chicken and zucchini with the rest of the meal. Grilled burgers, macaroni salad, and brownies. Not grilled. lol Although….. I really need to find some desserts to grill. any ideas???

I caramelized some onions and green bell peppers for the burgers. So good. I served them with homemade Cole Slaw – recipe coming soon!

Grilled venison steaks with grilled asparagus, and potato salad.

And I made a non-grilled snack. Homemade Chex Mix. This is always a favorite, and I like that I can use whatever I have on hand to mix in.

That’s it. Nothing terribly exciting. Just some really good grilled food!

Easy General Tso’s Chicken

I love making my favorite restaurant meals at home. I guess I’m weird, but I’d rather eat at home than go out to eat. When I found this Easy General Tso’s Chicken recipe, I knew I had to try it.

Easy General Tso’s Chicken

Like the name implies, this recipe is easy. Coat and brown the chicken. While that’s cooking make the sauce, it’s just measure and dump. Then add the chicken to the sauce before serving. So easy!

I did make a couple of substitutions, I used chili powder to taste, instead of the dried chilis. And I didn’t have any sesame oil, so I skipped that. The first time I made it without the hoisin sauce. It’s much better with it, so don’t skip the hoisin.

It’s so good. I’ve made it twice now, and it came out great both times! So good!

I highly recommend this Easy General Tso’s Chicken recipe! It tastes like what you would get in a restaurant!

Cooking For a Crowd – VBS Style

I’ve cooked for a crowd a number of times now. It’s not as hard as you might think!

So if you get asked to cook for a crowd, don’t be intimidated!

I recently cooked for 3 days of VBS at my church. I ended up not taking nearly as many pictures as I wanted, though!

The first day, we had elbow macaroni with sauce & green beans. Cookies for a snack.

The 2nd day, we had hot dogs, chips, and green beans. With cupcakes for a snack.

The 3rd day we had bologna sandwiches, and carrots with ranch. Nachos for a snack.

I made the menu, the shopping list, and did the shopping!

Here is what 14 pounds of cooked macaroni looks like! I cooked it at home, the day before. Yes, you can do that with pasta! Simply coat the pasta with a little olive oil and it keeps nicely.

For the nachos, I bought 100 of these 2 ounce cups. It is so much easier to fill these cups ahead of time, than to scoop it out on plates while everyone is in line. Worth the price, I say!

I used a cookie scoop to fill the cups with cheese. So easy! The scoop I’m using in the picture is a Pioneer Woman one from Walmart. lol But here’s a link to a similar scoop.

When feeding a crowd, sandwiches are easy to figure out how many you need. Check the label on the bread you want to use, it will tell you haw many slices in the loaf. I recommend subtracting the heels, as most people don’t like to eat the heels. Yes, this is another picture I stole from my Instagram stories. lol

I made some sandwiches with mayo, and some plain, with a bottle of mustard on the side. So hopefully the majority of people had their sandwich the way they liked it. In this picture it was snack time. We put the sandwiches on the counter again in case some of the kids wanted another one. And some did. I also left the carrots on the counter. Then the tortilla chips with the cheese cups. I put out more plates as they took those. The counter isn’t big enough to put them all out at once. If you look close, you can see cupcakes on the far end. The kids didn’t care that they were left over from the day before. They just wanted them. lol

Here’s a cheat sheet for feeding a crowd. If something you want to serve isn’t on the list, just google it. For example, how much macaroni for 50 people. Then decide how much extra you want to make, if any, in case you end up with more people than you planned on.

It’s better to have some food left over, then to not have enough!

Even though I didn’t take pictures of everything, I hope I shared enough to encourage you that cooking for a crowd isn’t as hard as it sounds!
