Tacos were on the menu last week, but I decided to play with the ingredients. I made enchilada sauce and then a couple of pans of enchiladas. I had made enchiladas before years ago with store bought sauce. I figured it was time to try my hand at making some from scratch.
I also tried making Mexican rice I’ve made some in the past, but I did it different this time. I made it with already cooked brown rice. It tasted good, it was just really moist.
The Enchiladas came out ok, but not perfect. I assembled them, including putting the sauce on them, then let them sit for about an hour before I put them in the oven. They came out soggy. So I need to work on that, too. The enchilada sauce was yummy, though! Recipe coming later this week.

Saturday – Sabbath- Make ahead meals- Fish fillets, tater tots, corn on the cob, peas
Sunday – soup & sandwich day – Turkey sandwiches on homemade bread, pickles
Monday – chicken – Baked Chicken, baked potatoes, green beans
Tuesday – pizza/pasta – Pizza with garlic crust, and homemade turkey sausage , linguica, and onions, carrot sticks
Wednesday – chicken – Homemade chicken al fredo, peas, corn on the cob
Thursday – beef – Tacos, carrot sticks, peas
Friday – Sabbath Dinner – Not sure yet…….probably left overs or whatever I can find in the freezer!
