Hotel Peabody Vanilla Muffins

I got this recipe several years ago off an email recipe list. They are so good. I have used half whole wheat flour, and half white, and also used brown sugar instead of white., and they are still really good.

Hotel Peabody Vanilla Muffins

2 cups sugar
4 eggs
4 cups all purpose flour
2 cups milk
1 TBSP baking powder
1?2 cup butter
1 TBSP vanilla extract

Beat sugar and eggs together. Add remaining ingredients. Mix until moistened. Bake at 350 for 20 minutes.

Using a 1/4 cup measuring cup as a scoop, I get 30 muffins.

What’s For Dinner?

I’m trying two new recipes this week, both are made in the crockpot. So should be an easy week for me. I’ve used recipes from Susan before, and the family has loved them all.  I’m looking forward to trying these new ones.

Saturday – beef – son made stir fry

Sunday – sandwich day – Meatball Subs

Monday – chicken – Whole Roasted Chicken, baked potatoes, salad

Tuesday – beef – Crockpot Cabbage Unrolls, carrots

Wednesday – leftovers – with salad

Thursday – chicken – Cream Cheese Crockpot Chicken, salad

Friday – Friday Night Fire – hot dogs, potato salad or macaroni salad, carrot sticks

Saturday on the Farm

I mentioned last week that another one of our cats had kittens. Here they are….

Kittens are so cute. We now have 9 kittens, and 4 adult cats. We’re going to have to give away/sell the kittens. The kids won’t be happy, but what are we supposed to do with 13 cats?!

The dogwoods were in full bloom earlier this week.

They are so beautiful!

I hate to say it, but we STILL haven’t gotten anything planted in the garden. We have a long growing season here in Kentucky, but the longer we wait to put anything in, the longer we have to wait for fresh produce!

We have on more Bible Drill Competition tonight, and then everyone’s working in the garden.

Freezer Cooking Day!

It’s Freezer Cooking Day for me! I love to stock my freezer with prepared foods, and meal helpers.

By meal helpers, I mean food that I can pull out that is prepared and ready to make into a meal. For example, dried beans that I have cooked, cooked chicken, cooked ground beef. It makes cooking a lot easier.

Here’s what I’m doing today:

Great Northern Beans 1 lb. – I cooked these in the crockpot overnight DONE
Pinto Beans 1 lb. – I cooked these in another crockpot overnight, mashed DONE

Cooked, deboned chicken
chicken leg quarters – DONE
Chicken breast – DONE

My plan also includes the following:

biscuits – unbaked – DONE
cupcakes – baked and frosted – DONE
chocolate chip cookies – DONE by daughter
pancakes – DONE by daughter
muffins – Might make Vanilla Muffins. I ended up making Pumpkin Chocolate Chip Muffins using pumpkin from the freezer. We grow our own, and I freeze it. These are delicious!

I’m making all of the above out of my pantry, without going shopping to do it. The chicken was already frozen raw, but as we’re getting half a cow in the next week, I need the empty the chest freezer. The cooked chicken will fit in the fridge freezers, I have 2 fridges. I plan on baking until I run out of flour.

It took me two days, (I’m moving very slowing these days)but I got everything done!

Here’s what’s in the freezer:
Chicken Broth – 2-8 cup bags, 1-6 cup bag & 6-1 cup containers
Cooked Chicken -8-3 cup bags of dark meat, (we used 3 cups for supper tonight) and 1 bag of white meat that has enough for about 10 meals for me.
Pinto Beans – 2 containers of mashed for refried beans
Great Northern Beans – 1-2 cup container & 4-1 cup containers
Biscuits – 38 frozen unbaked
Pancakes – 30, enough for 3 breakfasts
Pumpkin Chocolate Chip Muffins – 24 in freezer, 10 for breakfast in the morning, 1 for taste test….yummy!
Cupcakes – only 6 cupcakes
Chocolate Chip Cookies – only 1 dozen

I made all the above from what was already on had on hand. I need to get more snack foods in the freezer, but I can’t make anything else, until we get our 1/2 cow and I see how much freezer space I have left. I also want to try my hand at making homemade granola.

Kitchen Island

I have a small kitchen, so I always feel short of space. Work space and storage space.

So I made an island out of a microwave stand.

I have a large cutting board on top for extra work space. I have 2 large crockpots, my dehydrator and waffle maker stored on the shelves.

I have it next to the stove for extra work space there, but if I have others in the kitchen helping me, I can roll it away from the stove. I can get more people working in the kitchen, and that’s a big help, especially on holidays.

I bought the microwave stand at a yard sale for $5!

WWW Wednesday

I LOVE to read, so I was very happy to find Should Be Reading and WWW Wednesdays. I’m looking forward to finding lots of good books to read!

Here’s my list for this week:

* What are you currently reading?

I’m reading two books now. Which is pretty much normal for me. lol I’m reading A Christian Woman’s Guide to Hospitality by Quin Sherrer & Laura Watson. I’m loving this book! It’s an older book, copyrighted 1993, but still very relevant today. With Bible verses about hospitality and lots of tips and hints, I’m finding this book very helpful.

And also Radical – Taking Back Your Faith from the American Dream by David Platt. Written by a pastor, this book challenges you to find out what it really means to give up everything and follow Jesus. I’m only on Chapter 4, out of 9, and I’m already seeing changes that I can make. So far, I’m thinking this is a must read for Christians.

* What did you recently finish reading?

Recently, I read The Bridegrooms by Allison Pittman. It’s a novel about 4 sisters and what happens in their lives over the course of one week. With a flashback to a tragic event in their lives. Filled with tragedy and love, it’s a good read.

* What do you think you’ll read next?

Next in my pile to read is Praying God’s Word by Beth Moore I love Beth Moore books and Bible studies. I’m looking forward to reading this one.
