What’s for Dinner?

Another week, another easy menu. 🙂

I recently discovered an easier way to make the pizza crust. If we’re go to be having a busy Saturday, I make the dough on Friday. Right after kneading the dough, I place it int he bowl in the fridge loosely covered with plastic wrap. On Saturday, I take it out in the afternoon, let it sit at room temp for an hour, shape the crust, and let it rise for about 30 minutes. I then top with the toppings I prepared on Friday.

That takes a lot less time on Saturday, and we still get to enjoy homemade pizza for pizza and a movie night.

Saturday – pizza night – Homemade Pizza, , carrot sticks,

Sunday – soup & sandwich day – Dinner at church, left over pizza for supper

Monday – chicken – Turkey Soup, homemade rolls

Tuesday – beef – Stuffed Manicoti, spinach & carrot salad

Wednesday – super simple – leftovers

Thursday – chicken – Stir fry – planned leftover meat, rice, frozen stir fry veggies

Friday – Friday Night Fire/Beef – Roast in crockpot with potatoes & carrots, challah bread

Freezer Biscuits

Having biscuits in the freezer ready to bake is one of my “convenience foods”. They come out fluffy and delicious like you just mixed them up and baked right away.

 

Baking Powder Biscuits for the Freezer

6 cups flour
3 tablespoons baking powder
1 teaspoon salt
1 cup butter or shortening (I prefer butter)
2 1/4 cup milk
In a large bowl, sir together the flour, baking powder & salt. Using a pastry blender, cut in butter until crumbly.

Add the milk all at once. Use a fork to stir just until moistened. Turn the dough out onto a lightly floured surface. Knead dough by gently for 10-12 strokes, or until almost smooth.

Pat dough out until 1/2 inch thick. Cut dough using a biscuit cutter or you can use a glass dipped in flour to cut the biscuits.

At this point, you can bake right away at 450* for about 10 minutes on an ungreased cookie sheet.

To freeze, place biscuits on cookie sheet and place into freezer until frozen. When frozen, remove from pan and place into freezer bags or container. Return to freezer.

I also place the unfrozen biscuits in a freezer container, placing wax paper between layers.

Which ever way you choose, when your ready to bake, you can pull out the number that you need.

Bake frozen biscuits on an ungreased baking sheet at 450* for about 12 minutes, or until golden brown.

I usually get about 40 biscuits from this recipe. The number will vary, depending on how thick you make the dough.

Kitchen Tip – If you don’t have a pastry blender, you can use two knives. Use one knife in each hand, in a criss cross motion keep cutting the butter until the mixture is crumbly. Here’s what a Pastry Blender looks like. When I first started baking, oh so many years ago, I had no idea what a pastry blender was. My first apple pie with crumb topping was ugly. It tasted good, though. lol

Homemade Cracker Jacks

Homemade Cracker Jacks
1/4 c oil
1/2 c sugar
2 Tbsp water
1 Tbsp vanilla
1/4 c unpopped popcorn
Combine the oil, sugar, water and vanilla in a skillet. Let it get hot, then add the popcorn and cover.

The kids were fascinated by this. lol

Shake continuously until the corn has popped.

Pour onto wax paper.cool and serve. If you want to save for later, store in a tightly closed container.

I don’t know about the saving for later part. My kids loved this. And the ate the whole batch. You could add nuts to this if you wanted, but it’s yummy without them.

Butterscotch Blondies

I got this recipe in the mail from the grocery store a few years ago. These are really good. They’re great for taking to pot luck dinners where they always seems to be an abundance of chocolate. Since the ingredients are ones that are normally kept in stock, these can be whipped up quickly at the last minute.

Butterscotch Brownies


1/2 cup butter (1 stick) softened
2 cups light brown sugar, packed
2 eggs
1 1/4 cup all purpose flour
1 tsp. baking powder
1/4 teaspoon salt
1 tsp vanilla
1/2 cup nuts (optional)
2 tbs powder sugar (optional)

Cream the butter and brown sugar in a mixing bowl. Add the eggs and beat well. Add the flour, baking powder, salt and vanilla (and nuts, if using) and mix well.

Spread into a greased and floured 13×9 baking pan. Bake at 350* for 20-25 minutes, or until a toothpick inserted comes out clean.

Cook completely. Dust with powdered sugar, if using, and cut into squares.
