We had to leave an hour earlier for church tonight because of Christmas play pratice. I was running out of time, and needed to make something for dinner in a hurry. So I took the large package of chicken breasts (that I had to use or freeze TODAY because I bought them on clearance) placed them in a 13×9 baking dish. I covered them in parmesan cheese, then carefully poured tomato sauce over the top (I used a 29 oz can), being careful to leave the cheese on the chicken. Then I seasoned the top with salt and pepper, garlic powder, oregano and basil. Then sprinkled on lots more parmesan cheese. I baked it until the chicken was done. Baking time will vary, depending on how thick the chicken breasts are. While they were baking, I made some rice and broccoli.
This turned out sooooo good! It tasted like I had cooked the sauce for a long time before putting over the chicken. But all I did was dump it in the pan! Everyone loved it! The kids put the sauce on the rice and broccoli, too. Even DH loved it and he’s not a fan of white meat, he prefers the dark meat. The chicken came out so juicy and tender. I will definitely be making this again.
