In the Kitchen with Linda & Dinner Menu

I bought 2 large family packs of chicken breasts last week. That’s almost 10 pounds of chicken. I used two of the breasts for dinner one night. I diced the rest of it and made a large pan of chicken taco meat.

I served that one night, and the rest is for the freezer! 2- 3 cup bags, and 2- 2 cup bags. That’s 6 meals for 6-7 people from 2 large packages of chicken.

So…….this week….I’m so excited!

I figured out a way to get a pantry! This is huge! I have never had a pantry, and we outgrew our kitchen years ago. A pantry is so needed. I figured out a way to do a tiny amount of remodeling so I could get a pantry, as well as more storage room in the master bedroom. Our walk in closet end wall is up against one wall in the kitchen. By cutting a door, I get an instant pantry! Well, not so instant. We have to take down the closet system, move it to a wall in the bedroom, then install pantry shelves. But it’s practically instant. lol Then in the bedroom, we will be adding closet doors to the whole entire wall. One part will be for our clothes, and the rest for storage! And we are sorely lacking in storage, so it is needed as well. It’s a win-win situation. And I get a pantry!! Hopefully, I will have pictures next week!

 

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner?


Saturday – quick & easy- Dinner Out for the girls, frozen pizza for the guys because they had to cook for themselves and chose it lol

Sunday – soup & sandwich day – Dinner out for Mother’s Day

Monday – chicken – Baked ham, alfredo noodles, baked beans, beets

Tuesday – pizza/pasta – Pizza with homemade garlic crust, turkey pepperoni, onions, and peppers, carrot sticks

Wednesday – beef – Meatloaf, baked potatoes, mixed veggies

Thursday – chicken – Chicken Tacos with all the fixings

Friday – beef – Venison, potatoes and carrots in the slow cooker
