In the Kitchen With Linda – Dinner Menu

If you had been in the kitchen with Linda this week, you would have been able to watch Hannah and I make Banana Bread. Hannah mixed up a triple batch, and then I remembered that I had thrown away one of our bread pans. So I got out the book on my bread machine, and sure enough, you can bake fruit breads in it. The loaf at the top of this picture was baked in the bread machine, and the other two were baked in the regular oven. All three of these loaves are residing in my freezer. 🙂 I’m really shocked that we haven’t eaten any yet! lol

Hannah also made two Pineapple Upside Down Cakes using my homecanned Zucchini Pineapple and homecanned cherries. So good! And so gone! lol

The only major plans I have in the kitchen this week is to can some cherries. I really want to make some Chocolate Raspberry Sauce with the raspberries in the freezer from last years harvest. Hopefully, I can bot both of those done this week.

 

Now…. to answer the question that I get asked about a hundred times a day……….

Dinner Menu:

Saturday – Sabbath- Make ahead meals- Cookout – hamburgers, potato salad, roasted marshmallows

Sunday – soup & sandwich day – Homemade meatball subs with homemade meatballs on homemade french bread

Monday – chicken – Baked chicken, baked potatoes, green beans

Tuesday – pizza/pasta – Spaghetti with meat sauce, broccoli

Wednesday – beef – Cookout at church

Thursday – super simple – Chicken Pasta Salad

Friday – Sabbath Dinner – Meatloaf, rice, peas, corn

Saturday on the Farm – Compost

This week, on Saturday on the Farm, let’s talk about compost!

Compost is a great way to add organic matter and nutrients back to your soil. Composting is very frugal. Since your adding food scraps, leaves, clippings, and etc. from your yard, your compost is free. For a minimal investment of time, you receive a fertilizer that is better for your garden that store bought fertilizer.

To start composting, you need someplace to put it. Below, you can see the compost bin my husband made for me out of used palettes. There are numerous kinds of compost bins you can buy, but you really can make your own. You can also use trash cans for compost bins. You just have to make sure that you put numerous holes in the sides and bottom of the can. Water needs to drain out, and compost needs air to decompose.

Once you have your bin, it’s time to start building your compost pile. Here are some of the natural items that you can add to your compost bin.

  • Vegetable scraps
  • Fruit scraps
  • spent vegetable plants from your garden
  • leaves, fresh or dried
  • grass clippings
  • hay and straw
  • newspapers, cardboard, old phone books, paper napkins
  • wood shavings, sawdust, and ashes
  • weeds you’ve pulled, as long as they don’t have seeds
  • coffee grounds, tea bags
  • popcorn kernels
  • old spices
  • egg shells, rinsed
  • manure from cows, goats and rabbits can also be used

What NOT to add to your compost pile:

  • meat or seafood
  • bones
  • cheese
  • oils
  • citrus fruits

If you have enough to build your compost all at once, that is an option. Just layer your items, preferably alternating green (things that are still alive) and brown (your dried leaves, hay, straw, etc). Then leave your pile alone for several months. You can turn it once a month or so, and if it looks really dry, water it a little, but don’t soak it.

I like to add to my compost pile as I go along. Since my bin has two sides, I keep one side that I’m always adding to. In the picture below, the compost on the left is ready to be used, and the pile on the right is the one I’m adding to. Later this fall, I’ll stop adding to the pile on the right. By then, I will have used all the compost in the left pile, and I’ll start adding to it. In the spring, the pile on the right will be ready to use.

To use your compost, spread it around your plants. Compost is especially good for vegetable gardens and fruit trees, bushes, etc. I shared earlier how to make compost tea. This is a great way to get some quick nutrition to your plants.

Composting is easy, free (after you build or buy your bin) and your gardens will love it.

Our Homeschool Week in Review

One day this week, Zach decided he wanted to organize all his books. Who am I to stop him? lol He got everything looking nice. I hope he keeps it that way!

 

They kids (and adults!) are happy that the pool is now open. PE this week has consisted of swimming.

 

 

Our amazing homeschool news this week is that Hannah finished her high school work! Her last subject to finish was Kentucky State History from Switched on Schoolhouse. She scored a 96% for the course. 🙂

Calen has two subjects left to finish, Geometry and Abeka World Literature. He should finish both of those in the next week or two.

Guess I better get those diplomas ordered! For our older two, I ordered the diplomas from HSLDA They were very beautiful, and included a ribbon and seal. There are several places now that homeschool parents can purchase diplomas from. I’m going to get these two from HSLDA, also. That way all our students diplomas will look the same.

Calen and Hannah decided to have a joint graduation and party. So that will be in a couple of weeks, as soon as Calen finishes.

I made gluten free chocolate chip cookies last week that led to this picture I posted on Facebook. This is what fail looks like.

I cut them into squares and have been eating them. There were just for me, and I don’t care what they look like. lol

Hannah took over and made the regular chocolate chip cookies to take to our family reunion. so much better!

Maybe I should have her make mine next time! lol

Saturday on the Farm – The View From My Front Porch

It’s the beginning of a new month so I’m going to start a new feature. The first Saturday of every month I will share The View From My Front Porch.  I thought about calling it The View From My Rocking Chair. That makes me sound super old, though. lol But I am, indeed, sitting in my rocking chair on the front porch when I take these pictures. lol

Saturday on the Farm – The View From My Front Porch

Out in the yard, the bush on the left is a purple Butterfly Bush. It might look small, but it’s between 6 and 7 feet tall. The little flowerpot tower next to it is planted with Sweet Alyssum. They are flowering, but you can’t really see them in this picture. Farther down in that bed, almost behind the pole/tree, is the Cat Mint. As you can tell by the tall grass around this bed, our weed wacker stopped working. AGAIN! The brand new one we just bought two weeks ago. grrrrr So that’s going back to the store, and my husband is going to buy to buy a different brand. Seriously, why can’t they make these things last longer? We’re lucky if we can get one to last a whole growing season. But two weeks is ridiculous! Ok, enough about the lawn equipment!

 

I took my 17 year old daughter to the local green house and had her pick out some flowers to plant on the front porch. One of these years I will build a green house (Ok, my husband will build it…..lol) and grow my own flower starts. The Pineapple plant in the round pot on the left is looking pretty sad. It didn’t care for winter in the house. (See? I need a greenhouse!) Of course, it would have minded winter outside a lot more! lol I started it last spring, so hopefully it will perk up and give me a pineapple this year.

As you can see, we had been planting the flowers and I didn’t even clear off the trays before taking the picture. That’s how you know this picture is real, and not staged! lol My little veggie plants in the other trays are waiting not so patiently to be planted in the garden.

Looking straight ahead, in the picture below, you can see the Cat Mint from the picture above, and the Butterfly Bush from the picture below. You can see the “Front Bulb Garden”. Planted there are Daffodils, a lone Tulip, Crocus’s. There were a few other bulbs planted, but they stopped coming up. Basically, they are all spring bulbs. My daughter planted Gladiolus’s, and there a five or six growing. You can see the Butterfly house, too. I’ve never seen a Butterfly go in or out. Maybe this year. To the right of the Butterfly House, those flowers in the bushes are Honeysuckle and Wild Roses. There is no better smell than Honeysuckle and Wild Roses! Not counting chocolate, of course. lol In addition to giving us privacy from the road, these “weeds” that most people cut down give us beautiful flowers, a place for birds, and you can even eat them. You can make Honeysuckle Jelly, anyone else love to just suck the juice out of the flowers? lol The Wild Roses have numerous uses, as well. I’m a big fan of letting the wild stuff grow.

Now, looking towards the right, we have the big Butterfly Bush ( also in the picture above), this one has white flowers. My husband gave it a serious trimming last fall, but it’s still over 6 feet tall. On the pole/tree is the Mandevilla . I had just moved it outside for the summer. I couldn’t lift the pot to take the tray out from under it. My husband had to do that. I’ve had this plant for a few years and usually put it in the back yard, but now that we have the front porch, I’ll get more enjoyment out if it here. It will look neat from the road (which is behind the tall bushes/weeds in the background) with the vine growing up the pole.  The flowers that you see on the right of it, are not on the Mandevilla, but on the Fuchsia in a hanging pot on the other side of the pole. I bought that at the greenhouse, too. I’m going to have to find another spot for it, though, it gets too much sun there.

You can see flowers in the two pots on the ground, they are Calibrachoa  The pots are in the corner of the porch and the ramp going down to the grass that you can see a corner of. The pots are around the same height as the one that contains the Mandevilla, but they are sitting on the ground.

Those are the Yahtzee dice I made out of a pressure treated 4×4. (Well, my husband did the cutting, I did the dots.) I try to add a new yard game every year, I found this online, and they were easy to make. We’ve played with them already, and it’s fun to roll the big dice in the yard.

Our Homeschool Week in Review

I was going through some craft stuff that was given to us (several years ag0) to get rid of what we’re never going to us. Zach came in and saw this little wooden train. He snagged it and went running. I guess before I said he couldn’t have it. lol He painted it, and gave it to his grandfather for his birthday.

And I’m sorry to say that’s the only picture I have to share this week. Apparently, I need to take more pictures. The thing is, we’ve been working hard on book work. How many pictures can I share of my kids sitting with a book?  I’ve even got kids dragging their feet. Which would only make a good picture if I posed them dragging their feet. lol

Zach lost his math notebook. So now he has to go back and do lessons that he already did. When one has to do the work over again, one quickly learns to keep track of ones notebook.

Abby is finishing up her 8th grade subjects. She only has math and writing left. This week, I started her on her 9th grade math. It’s for a Schoolhouse Review Crew review, so I’m having her start it now. I’ve never used this curriculum before. It’s looking promising.

Hannah only has one subject left to finish so she can graduate! She needs to finish Kentucky State History. I use Switched on Schoolhouse State History.

Calen has two subjects left to finish so he can graduate! He needs to finish World Literature (Abeka) and Geometry (Khan Academy).  I estimate he will be done in another month.

I’ve been talking to Calen and Hannah about what they want to do If they are graduating within a few weeks of each other, I asked them if they wanted to have a double graduation and party, or if they want separate graduations and parties. They can’t decide! lol  So, I guess we’ll just have to wait until the first one finishes their work to see what they want to do.

There is no other exciting news here. Just book work and more book work! I will try to do better about taking pictures this week. lol

Paperless Home Organization eBook Review

As part of the Schoolhouse Review Crew, I received the Paperless Home Organization ebook from Simplified Pantry to review. Paperless Home Organization is a how to guide that walks you through creating a digital homemaking binder. Once you have your homemaking binder in place, you can go paperless! I don’t know about you, but after 31 years of marriage, 6 kids, and 22 years of homeschooling (and still counting!), I’m ready to get rid of some paper!

Paperless Home Organization eBook Review

The author, Mystie Winckler, tells you which programs she uses and takes you step by step through signing up, setting up, and filling up your binder. She uses Google Mail, Google Calendar, Evernote and Remember the Milk to organize everything. I was already using Google Mail and Calendar, but she had several tips that I hadn’t heard of before that enable me to make better use of them. The bulk of the book is about setting up and using Evernote and Remember the Milk.

Remember the Milk is where you keep your current to do lists. These can be sorted out, and assigned due dates, or marked not due so it is always on your list. I love that I can have my list on my Gmail page, or on my calendar, over on the right had side, so I can see it no matter what I’m doing. As we all know, a to do list that is seen is more likely to get done. I also have Remember the Milk on my Kindle, so can carry my to do list with me where ever I go. Remember the Milk can also be accessed online, or on your phone. I love that I can set it up to work for me. Since I hadn’t used Remember the Milk before, the authors tutorial was a great help.

Your digital home binder will mostly be stored on Evernote. I had never heard of Evernote before, so I took full advantage of the authors how to’s in this ebook to help me. She not only tells you what to do, she shows you with many screenshots. Seeing what everything should look like, made it so much easier for to to set it up. You can tell that the author has been using this program, and knows what she’s talking about. It would have taken me a very long time to figure out some of the steps that she included in the ebook. Instead of having to figure it all out by myself, I quickly and easily followed her directions and had my binder up and running.

One of the things that the author mentioned was that  you could get an Evernote Web Clipper extension for Chrome. Now when I’m online, and I see something I want to save, I can save it right to my notebook. All those great tips and recipes that come across my Facebook feed can be clipped and put into the correct notebook while I’m on Facebook. I don’t have to go open the Evernote program to copy and paste. I was also able to add the Evernote App to my Kindle. So I have access to my digital binder whenever I need it.

Here is a screenshot from my Evernote. You can see on the left, I’m working on my notebooks. I have my Recipe Notebook open, so the middle column shows those notes. And on the right, was the last note I had opened, a recipe I’m planning on making shortly.

Since I have many, many years to catch up on, this is going to take awhile. But I’m motivated, and this system is easy. Thanks to Paperless Home Organization I think I can go paperless!

I read through the Simplified Dinners Gluten Free/Dairy Free ebook. If your just starting out cooking gluten free or dairy free, you’ll find lots of great recipes to get you started. I was a little disappointed that there wasn’t more recipes for baked goods. Overall, though, this is a great recipe ebook. I found a few recipes I want to try.
