Sue’s Layer Cake Recipe

This recipe came from my husbands grandmother. She got the recipe from her friend Sue, hence the name. I just love recipes with history. This is a tried and true family recipe. And it’s yummy!

The original recipe calls for using shortening. It comes out great that way, and also using butter like I did in these pictures. I haven’t tried with coconut oil, but I bet it would come out great, too. I do not recommend using margarine.

Complete recipe below. Combine dry ingredients in bowl. Place the melted shortening in a 2 cup measuring cup. Add eggs to shortening.

Fill to the 1 cup mark with milk. ( In these pictures, I doubled the recipe, that’s why I’m filling to the two cup mark) Mix thoroughly.

Add wet ingredients to dry ingredients. Mix well.

Pour into greased pan.

Bake and enjoy with your favorite frosting.

Ingredients
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. slat
  • 1/4cup melted shortening
  • 2 eggs
  • milk
  • 1 tsp. vanilla
Instructions
  1. Combine sugar, flour, baking powder and salt.
  2. Drop 2 eggs into melted shortening. Fill to 1 cup with milk.
  3. Add to dry mixture. Add vanilla.
  4. Pour into greased 8×8 inch pan.
  5. Bake for 45-50minutes at 350* or until inserted knife comes out clean.
Notes

Recipe is easily doubled and baked in a 13×9 pan.
Frost with your favorite frosting.

Our Homeschool Week in Review

This week the kids dissected owl pellets. The older kids, now in their twenties, had done it before, but the younger kids hadn’t. So as part of a unit study we were doing, (I’ll share more on that later after I post the review for it) they finally did it. Hannah, 16, opted not to take part. She didn’t even want to walk through the room when we were doing it. lol I had purchased this Student Owl Pellet Kit, and the rest of the kids had fun. Well, Abby said she didn’t have fun, but she finished without complaining. Zach, 12, was the one who enjoyed it the most. Here’s one picture, I am saving the rest for the review.  🙂

Last weekend, our church had it’s annual outdoor youth revival, Praise Fest. My family worked so hard on it. The kids and my husband put in long hours making sure all the right equipment was there, setting up, working the event (singing, skits, cooking, audio, video), and cleaning up afterwards. They weren’t the only workers, by far, but they sure did put forth a great effort and lots of hours.

They had lots of giveaways for the attendees, including John 3:16 face tatoos. Temporary,of course! lol Zack liked them, until he tried to take them off.

My beloved mother in law died last Friday morning. While not totally unexpected, it still had a great and lasting impact on our family. I am so proud of my kids and husband for going forth with Praise Fest Friday and Saturday.  Because they had seen what  an awesome difference Praise Fest has made in lives in the past, they wanted to go forward and participate.

Monday night was the first volleyball practice of the season for the girls. I didn’t take any pictures. I’ll have to remember to get some next Monday. Their arms were all red, and Hannah had a few little bruises on her arms. They’ll toughen up. lol

Raising Real Men – A Cry From Egypt – Book Review

As part of The Schoolhouse Review Crew, I received the book A Cry From Egypt from Raising Real Men to review.

Raising Real Men is a website from Hal & Melanie Young. They are the homeschooling parents of 8, including 6 boys. Their book, Raising Real Men…Surviving, Teaching and Appreciating Boys was the 2011 Book of the Year of the Christian Small Publishers Association.

Their publishing company is Great Waters Press. They have several books from a biblical perspective on their website to help families.

One of their newest books is A Cry From Egypt written by Hope Auer. Hope is a recent homeschool graduate.  A Cry From Egypt is her first book and the first book in “The Promised Land Series”. Hope started writing the book at the age of 13 as a school assignment while her family was studying ancient Egypt. She spent her high school years rewriting and revising it.

 

“Girls, get back!” Ezra shouted.

His face was pale, but his eyes kindled with indignation as he stood in front of the girls protectively. Ezra dropped the pitchers in the sand and his hand ashed to a dagger, concealed under his tunic. Jarah’s eyes grew wide. He could be killed for carrying a dagger!

Jarah was a slave in Egypt. It was a dangerous place to be.Her work was exhausting and her family was torn between the gods of the Egyptians and the God of Abraham, Isaac, and Jacob. And her brother… would his Ada be given in marriage to an Egyptian in the palace? Would they ever be free?

Adventure, excitement, love, and faith come together when Jarah and her family find themselves at the culmination of four hundred years of history.

 

The book is illustrated by Mike Slaton, also a homeschooler. He graduated from high school in the middle of the project. He did an excellent job with the cover, and the drawings on the first page of every chapter. The cover really portrays the story and the feelings of the book.

A Cry From Egypt is a Christian historical fiction book for ages 8 and up. In the Preface, the author explains that while the plagues and other events really happened, Jarah, her family and friends are fictional. I really liked how the story draws you in. You feel like you are really there with Jarah and her family, working and crying. Yes, I was brought to tears in a few places. That’s how far into the story I was. The story is based in the time period before the exodus, while the Hebrews were still slaves.

I used this book as a read aloud with my 12 year old son. I noticed, though, that the other kids would always end up in the living room while I was reading.  Zach would always ask for me to read more. The other kids would wait to make sure I was done before leaving the room. lol It held the attention of all of us. Zach would have been very pleased if I had read the whole book to him the first day.  Instead I heard, “You have to read two chapters today, Mom!” for several days.

There are some scenes that might be hard to read for you or your children. They are related to slaves being beaten. So be aware if you have a sensitive child. Given that warning, A Cry From Egypt is a great family read aloud. It’s also a great solo reading book for all ages. I enjoyed reading it, too.

At the end of the book, the author includes several pages about her research. This is a very nice addition that is great for starting an ancient Egypt study.

A Cry From Egypt is available on the website. Only advanced reader copies are available as of this writing for $12.50.

Family Time Fitness – Review

As part of The Schoolhouse Review Crew I received a download of Family Time Fitness Homeschool Core 1 for ages 4-13 to review. Family Time Fitness is an award winning program that allows parents to teach physical fitness regardless of their training, or lack thereof. Fitness for Homeschools is designed by experts in body movement, kinesiology, training and nutrition.

Family Time Fitness is structured physical activity to help you teach and manage your students physical fitness. Fitness for Homeschools Core 1 includes 260 planned lessons.  They recommend a minimum of 3 lessons per week, with 5 lessons a week strongly recommended. Each lessons takes 30-45 minutes. We tried for 3 lessons a week, although there was a week or two where we only got in 2 lessons. Health professionals recommend exercising 3 times per week, and Family Time Fitness’s recommendation agrees with that.

The Fitness 4 Homeschool Curriculum includes a startup guide, PDF lesson plans, video demonstrations, assessment tools, reminder emails, lifetime curriculum and video updates, access to online webinars and certificates of completion.

Here’s a short video by  Body Movement Expert Dr. peter Minke talking about Family Fitness and family exercise what it is, what it isn’t and why you need it.

 

The curriculum comes as a download in PDF form. The directions are written clearly and simply. Sometimes though, you really need to see an exercise or activity done to be able to do it properly. I loved that for each exercise there is a link that when clicked opens up a video showing how to do it correctly. We watched most of them. The kids wanted to watch even when we could figure out what to do by reading the lesson.

There are only a few pieces of equipment required for the curriculum. Playground balls, hula hoops, jump ropes, cones, bean bags, and the like. No big purchases are required. You may have many of these already. We did. It is recommended to have at least one of each for every two students. It does make it nice though, for each student to have their own. That way they can all do it at the same time. Taking turns does work out well, too, though.

I used this with my 12,14, and 16 year old kids. I had the 16 year old do it with us to help her get ready for volleyball season. This curriculum is great not only for regular physical activity but also for getting kids ready to play sports. There was a lot of complaining the first week or so, as they were all sore. For health reasons, I was unable to participate in the exercising, but I was there for all the sessions, telling the kids what to do and showing them the videos. And sometimes laughing with them. They had fun doing all the exercises and activities. Well, ok, they didn’t have fun doing all the exercises. None of them liked the frog squats. I can’t say I blame them. lol I plan on  continuing with this curriculum for the rest of the school year. It will be really good this winter when they are unable to do any outside activities.

I asked my kids if I could take pictures or videos of them doing some of the exercises and activities. I was given a resounding “No!” lol Thankfully, Family Time Fitness provided a few pictures. So these are not my kids, and that is not my house.

A composite of 20 students brains while taking the same test, after sitting quietly and after a 20 minute walk. Clearly, the students were able to think better after exercise. I know I’ve always used physical activity to tame my boys so they could sit and study. It’s nice to see the science behind the theory. It really emphasizes the need for physical activity. So not only is physical activity necessary for good physical health, it’s also necessary for good mental health.
