Homemade Baked Beans

  • I love baked beans. I just don’t love all the additives in canned baked beans. I tired once time years ago, like 13 years ago,  to make my own baked beans, and it just didn’t work. Not only didn’t they taste good, but the beans were hard, even after baking for a few hours.


    Since the summer cook out season has started, I was determined to make my own baked beans. My bean cooking talents have improved since then. I now cook and freeze beans for all our bean needs, so I only had to pull the beans out of the freezer. Because of my freezer stash of beans, I got to spend the time working on the sauce. And it’s good! I don’t have a picture because we ate them all before I could get one!

    Baked Beans

1 cup tomato sauce
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
1/4 cup diced onion (more or less to taste)
3 tablespoons real maple syrup
2 teaspoons salt
1/4 pepper

6 cups cooked pinto beans

Stir together all ingredients, except beans in sauce pan. Bring to boil, then simmer until onions are done, 15-20 minutes.

Stir in beans.

You can serve at this point, or pour beans into a baking dish and bake uncovered for 30 minutes. Or you can cover with foil and bake for 2-3 hours. If beans are getting too dry while cooking, you can add a little water.

*NOTES:


You can used canned beans if you prefer those. 6 cups of beans would be about 2-3 cans of beans. If preparing dried beans, follow the package directions for soaking and cooking the beans, then proceed with the recipe.

I didn’t have any molasses, but look forward to trying this recipe with molasses. So if you don’t  have real maple syrup, try molasses.

We don’t normally eat bacon, but if you do, you can add chopped bacon mixed in with the beans, or lay slices of uncooked bacon on top of the beans before baking. Just make sure to bake until the bacon is completely cooked.

Tuesday – pizza – Homemade Pizza, carrot sticks, salad –

Wednesday – super simple – leftovers, salad

Thursday – chicken – Baked Chicken, rice, cooked carrots

Friday – Friday Night Fire/Beef –  steak, broccoli, homemade Challah bread

Mother’s Day

I started a new family tradition for Mother’s Day this year. With the kids getting older, moving out, and married, it’s harder to get everyone together for Mother’s Day. Actually for any holiday!
So this year, I told everyone no cards, no presents, no going out to eat. I just want everyone to get together on Saturday before Mother’s Day for pictures.
I had fun trying to get everyone lined up for pictures. They range in age from 10 to almost 25. I haven’t said anything or posted any pictures of my oldest 2 for a few years now. They have their own lives, and as such, should be the ones to decide whether to share them, and with whom they share. I did tell them all yesterday that I was going to post some of the pics online.
So here they are, all my children.  🙂

Each Life is Unique by

“God’s divine power has given us everything we need for life and godliness through our
knowledge of Him who called us by His own glory and goodness. II Peter 1.3 (NIV)

Moms, God wants you to know that He has given you everything you need for life —
– your unique life. He does not plan to give you what you might need to live the life of
your best friend, or your neighbor, or even your favorite mother-model. No, God has
called you to the life that He planned. I suspect that for most of us, it didn’t turn out to
be the life we thought it might be… so long ago when we were young and dreaming
of ‘growing up.’

On Mother’s Day I often recall my own dreams to one day be a mother. I grew up
playing with dolls and looking to my own Mama as a model for that particular role in life.
However, by the time I reached my thirties I was still not a mother! God did, however,
have a plan. It just wasn’t what I imagined.

My own unique life would find me becoming a mother through the adoption of my first
three children who were ages 9, 7 and 4; and then much later giving birth to our fourth
child. Of course I was shocked when God revealed this to me, but I was ecstatic as well.
It’s as though I could hear Him saying, “Well, you’re not getting any younger so I’m just
going to just give you a jump start with three at one time!”

A huge blessing! A huge adjustment! A joy and a struggle. Change is often like that,
isn’t it? We finally get what we want then we have to deal with it. May I just offer a bit
of advice if you just got a great answer to prayer, but perhaps not in the way or form
you imagined? Just receive it. Embrace it. And be willing to move forward into a new
paradigm for your life. So what if you’re not like all the other mothers you know? So
what if you’re not like your own mother? So what if your family unit is different? I
guarantee God has a plan.

Not only did he want me to embrace my own story, but He called me as a mother to
do perhaps one of the most important tasks of all — to nurture my children to live their
own unique lives. Not for me to try and squeeze them into what I hoped and dreamed
they would be. Not for me to try and live my life through them. But to recognize how
God made them, gifted them, and called them to their own special place.

All of my 4 kids are different from one another. Let’s take sports, for instance: I have
one child who wins gold medals in international tennis competition, one who is a born
equestrian, another who competes nationally in obstacle course shooting matches, and
yet another who manages to dance onstage in 3 inch heels, do cartwheels and splits while
singing at the same time. Now, honestly, I do none of these things. And yet they do.

I don’t remember placing my order with God for these things.  But I do remember
when that tennis player turned 9 years old and I enrolled him in Special Olympics for

the first time and how it changed his life… and ours. I remember getting a counselor job
at an exclusive summer camp so that my daughter could take English riding classes. I
remember being a Cub Scout leader (even though I knew nothing about boys) so that son
could one day become an Eagle scout and pursue his love of the great outdoors. And yes,
I remember enrolling my preschooler in dance lessons. Later when all the little girls were
scared to go on stage for the recital, she exclaimed that she had endured a whole year of
lessons just so she could go on stage.

Don’t compare yourself to someone else. And don’t live vicariously through your
favorite reality show star. Live your own story. And Moms, raise your kids to embrace
the unique life God has for them.
Remember, He has given us everything we need for life!

Our Homeschool Week in Review

Our homeschool week mainly concentrated on lots of study and practice time of Bible Drill for Abby & Zach.
Their State Bible Drill was on Friday night.
Abby is a State Winner! This is the 3rd year in a row that she was a State Winner, so she received a 3 Year State Winner Medal. It’s the small white medal. The larger medal is from the Association for being a 3 year Association Winner. The trophy is for being an Association Winner this year, and the certificate is for being a State Winner this year. Next year she moves up to the next age group, 7-9th grades, with more memorization.
Congratulations Abby!!

Zachary was not a State Winner this year. He missed too many. That’s ok, we’re still proud of him! He won a trophy for being an Association Winner, and a certificate for participating in the State Drill.

Congratulations Zachary!!

They are looking forward to taking a break from all that memorizing! We won’t get the papers with what they have to learn for next year for another couple of months.

They will continue to read their Bibles, though!

Next week will find all the kids buckling down so they can finish this years work. Their choice. They want a summer break. I prefer to school year round.

But if they are willing to work hard to finish, I will let them!  🙂

Saturday on the Farm

I have a lot more pictures to share this week. There is so much to see and enjoy this time of year. So let’s get started.
The Iris’s are in full bloom in the a/c garden. It’s named the a/c garden because the a/c unit is in the middle of the garden. lol Original, I know. lol

The yellows are all blooming, and the purples are just getting started. These Iris’s only bloom once.

This garden is also where the girls plant whatever flowers they want. They planted glad bulbs that had been given to us last year. Those are all coming up again. This year, I bought them some Purple Hyacinth Bean seeds, (the link goes to the actual ones I bought, it is an affiliate link). I found pictures of a trellis that I really liked made out of branches, so they are going to be building that shortly so they can get the seeds planted. The package says to wait until nights are above 50, and we had it dip down into the 30’s this past week. So we have another week or two to get it done.

The Blackberries are blooming. Which explains the cold weather this week, Blackberry Winter. This is our last “winter”, so the temps will be getting steadily warmer.

I began my tour by the back door. When I had made my way around to the front yard, this is what I found at the front door. lol They always come and look in the front door. They will even “knock”. I’m pretty sure they are looking in to see if we are eating anything good. lol

 I do have seeds planted in the flower pots, and they are coming up, just not big enough to see in the picture.

The Raspberry bushes are blooming! These vines spread so much, that we have more plants than last year. My husband also transplant about 5 or 6 more plants that were coming up at his parents house. They gave us the raspberry plants a couple years ago, so they can keep their patch down to a workable size for them. We would love to have a very large patch, hopefully with enough to sell. Might be another year or two, but that is our goal.

My daughter found this flower growing on the side of the road, and transplanted it into the flower garden in front of the house. I don’t know what kind it is, but it is pretty.

You may be wondering why you haven’t seen more of our vegetable garden than just the tomato plants that I started. That’s because our garden looks like this:

Not pretty. We have had so much rain the last couple of months, that we haven’t been able to get out there. It’s just to soggy. The farmers around here haven’t been able to get their crops in for the same reason. Thankfully, we have a long growing season here. I’m hoping it will dry out enough this week to get in there and work.

The grapes are getting big. The vines have a lot of grapes this year. I need to make sure we cover them in a few weeks to keep the birds from eating them all. Again this year.

We  have a couple of strawberry plants that showed up in the herb garden a couple of years ago. I call them wild strawberries, but I don’t know for sure if they are “wild” or if the kids threw strawberries out there, and they seeded themselves. It’s also possible that the chickens dragged strawberries into the herb garden to eat and they got planted that way. Whatever happened, the strawberries are doing nicely. I sure would love to have a big strawberry bed. Someday…..
