Freezer Biscuits

Having biscuits in the freezer ready to bake is one of my “convenience foods”. They come out fluffy and delicious like you just mixed them up and baked right away.

 

Baking Powder Biscuits for the Freezer

6 cups flour
3 tablespoons baking powder
1 teaspoon salt
1 cup butter or shortening (I prefer butter)
2 1/4 cup milk
In a large bowl, sir together the flour, baking powder & salt. Using a pastry blender, cut in butter until crumbly.

Add the milk all at once. Use a fork to stir just until moistened. Turn the dough out onto a lightly floured surface. Knead dough by gently for 10-12 strokes, or until almost smooth.

Pat dough out until 1/2 inch thick. Cut dough using a biscuit cutter or you can use a glass dipped in flour to cut the biscuits.

At this point, you can bake right away at 450* for about 10 minutes on an ungreased cookie sheet.

To freeze, place biscuits on cookie sheet and place into freezer until frozen. When frozen, remove from pan and place into freezer bags or container. Return to freezer.

I also place the unfrozen biscuits in a freezer container, placing wax paper between layers.

Which ever way you choose, when your ready to bake, you can pull out the number that you need.

Bake frozen biscuits on an ungreased baking sheet at 450* for about 12 minutes, or until golden brown.

I usually get about 40 biscuits from this recipe. The number will vary, depending on how thick you make the dough.

Kitchen Tip – If you don’t have a pastry blender, you can use two knives. Use one knife in each hand, in a criss cross motion keep cutting the butter until the mixture is crumbly. Here’s what a Pastry Blender looks like. When I first started baking, oh so many years ago, I had no idea what a pastry blender was. My first apple pie with crumb topping was ugly. It tasted good, though. lol

My Review:

The devotions, 366 of them, are dated, including February 29. So you can start using this book at any time during the year, and use it for years to come.

There is also a section in the back entitled “How to Pray for International Missionaries and People Groups”, with 16 ideas for praying for them.

There are indexes in the back to help you. One is for the title of the daily devotions. So if you remember having read something, you can look it up by the title. There is also an index of the Scripture verses used. I find that very helpful.

The devotions, which aren’t long, have a Bible verse, a few paragraphs written by a missionary, and a prayer. Since the missionaries write about their lives on the mission field, this would be a great book for family devotions.

Our Homeschool Week in Review

We had a pretty great week!
I think this is our third week in a row where no one had a cold! 
It's so much easier to keep up our routines when the kids feel good. Since we've had one cold after another since October, it's been pretty rough. We're so ready for spring. 
We did have some warmer temps this week, and the kids got to go for a couple of long walks down the road with Grandma. They even rode their bikes on one of the walks.  I'm happy when PE involves something other than climbing the walls and jumping off the furniture. lol

Handmade Check Book Cover Tutorial

My plastic checkbook cover was showing its age. That’s a nice way of saying falling apart. Have you seen how much the check companies charge for a new cover? Gone are the days of getting a free one when you order checks.
Since I really don’t want to pay almost $15 (or more!)  for a new checkbook cover, I decided to make a cover for my old plastic cover.
To make one, you need fabric scraps, needle and thread. That’s it. I used some quilted fabric that I had.

I laid the fabric out, and cut around my plastic checkbook cover about a half an inch larger all the way around.

Then lay two smaller pieces on top of the bottom layer and the plastic checkbook cover. You want to place these about 1/2 inch away from the center fold of the plastic cover. Trim the outer edges to the same size as the bottom layer.

Then you sew all the way around the outside about 1/2 inch in from the edge. I did this by hand. You can do it on the machine if you want. It’s such a small area, it didn’t seem worth digging my sewing machine out.

One you have sewn all around the outside, go around cutting slits about 1/4 of an inch apart, up to the seam. Be careful not to cut through the seam. Because my fabric was quilted, I cut away the batting from the outside of the seam. You can see the batting on the left, and on the right, you can see the batting is gone, and I have cut the slits.

Then insert the plastic cover with the checks and the register.  And your done! Yes, I know my checks are in upside down. lol That’s just for the picture.   🙂

 

Once this has been used a little while, the edges will get more of a rag look to them.

This was a very quick and easy project. Now I’m not embarrassed to take my checkbook out in public. No one can see the old, old plastic cover hiding inside this “custom” checkbook cover.  I actually made a purse out of this fabric, so when I use that purse, I’ll have a matching set. snazzy…..
