This week I revived an old recipe I used to make years ago. It’s been at least 5 years since I made Crockpot Cheeseburgers, most likely more.  Everyone loved them. So I will probably serve them more often now.

Crock Pot Cheeseburgers Recipe

This is an excellent recipe for busy days. Whether your too busy to cook, or short on time to eat dinner. This recipe works for both types of days. These are so good. Everyone loves them, children and adults. They are like a sloppy joe, only with cheese.  And this Crock Pot Cheeseburgers recipe is so easy!

Crock Pot Cheeseburgers

1 1/2 lb. ground beef
1/2 tsp. garlic powder
8 oz. box processed cheese (aka Velvetta type cheese) , diced (2 c.)
1 medium green bell pepper, diced (1 c.)
1 small onion, diced (1/4 c.)
2 cloves garlic, finely chopped
8 buns

Cook beef, garlic and peppers until brown; drain. Mix beef and remaining ingredients, except buns, in a 3.5 to 4 quart cooker. Cover and cook on LOW heat until cheese is melted and combined. This may only take 2-3 hours in your crock pot or leave in the crock pot up to 6 to 7 hours. Serve on buns.

 

This recipe is especially easy if you have the meat already cooked in the freezer. In that case, if you were using fresh peppers and onions, you wouldn’t have to cook them before hand, they will cook in the crock pot. Just dump everything in and turn it on. It doesn’t get any easier than that! You can, of course, leave out the onions and peppers, but they add so much flavor. You could also sub a hotter pepper instead of the bell pepper for a different kind of cheeseburger. I got this recipe on an email list over 10 years ago, so I don’t know the original source.

I finally started working on the apples this week! We finally brought them all in the house, so that makes it easier to use them. lol You can see pictures of the last of our apples harvest over on my Saturday on the Farm post. I started with dehydrating, because it’s the fastest thing to get going. lol I now have about 4 quart jars of dehydrated apples. I’ll keep going, dehydrating a load or two a day this week. 

My handy dandy tools the Snackmaster Dehydrator and the Apple Peeler/Corer/Slicer make quick work of processing all these apples.

I made a new to use dish last week. Well, kind of new. I had to take Abby to volley ball practice and we were to be gone from 4 until almost 7. We usually eat supper at 6 every night, including sending my father in law next door his dinner. So I layered cut potatoes, carrots, and onions in the crockpot. I add a pint of my home canned chicken broth and topped with boneless skinless chicken breast. I sprinkled with salt, pepper, and a little garlic powder. It came out great. So great, that it’s on the menu again this week.


This week I make cookies for the first time in my new (affiliate link) stand mixer. It worked great. What a relief to my poor hands. No more mixing everything by hand!

I didn’t do anything major in the kitchen this week. Unless you count cooking supper for 7 every night. lol Oh, and how can I forget the fact that they want to eat the other two meals a day, plus snacks! Some weeks, though, I just have to do the basics, with nothing extra.

This week, I really must get the apple jelly and apple butter done. Well, started at least!

I got two more batches of applesauce made. With the help of my family, of course. They picked them, washed them, and cut most of them. Then I take over with the cooking. With these batches, I taught my daughter, 17, how to use the Food Press. (Affiliate Link) Then I took back over to sweeten and can.

This batch was 13 quarts, with about a pint left over for eating.

Tacos were on the menu last week, but I decided to play with the ingredients. I made enchilada sauce and then a couple of pans of enchiladas. I had made enchiladas before years ago with store bought sauce. I figured it was time to try my hand at making some from scratch.

I also tried making Mexican rice I’ve made some in the past, but I did it different this time. I made it with already cooked brown rice. It tasted good, it was just really moist.

The Enchiladas came out ok, but not perfect. I assembled them, including putting the sauce on them, then let them sit for about an hour before I put them in the oven. They came out soggy. So I need to work on that, too. The enchilada sauce was yummy, though! Recipe coming later this week.
