Brownies For a Crowd

Brownies is a favorite snack or desert in our house. I guess the same can be said for most houses! With my Brownies for a Crowd recipe, you can have plenty for your family, or take them to a special gathering to share.

I adapted this recipe to fit in my large square cake pan. It’s 14 x 14. If you don’t have a pan that large, you can bake it in two 13 x 9 inch pans. Or four 8 x 8 square pans. Or four 8 inch round pans.

S’more Parfaits

I found a recipe for S’more Parfaits and the kids thought it sounded great.

Ok, so did I!

So we bought the supplies and made them.

All you need is chocolate pudding, graham crackers, mini marshmallows, and mini chocolate chips. You can make the pudding yourself, from scratch or using a mix like I did. You could even use the little pudding cups. That would definitely help with portion control. My kids think if it’s there, they should eat it. lol

Then you start layering. Graham crackers, pudding, marshmallows, and chocolate chips.
Keep repeating the layers until your cups are full.

We used plastic cups for the kids snacks.  Serve immediately. I found the graham crackers & marshmallows got mushy when we waited to eat them.

This is a fun snack or dessert for the kids to make themselves. What kid wouldn’t love to make this for an after school snack? My kids would love to make them these anytime!

Monday – chicken – Baked Chicken, baked potatoes, squash

Tuesday – beef – Roast with veggies in the crockpot

Wednesday – super simple – leftovers, salad

Thursday – chicken – Chicken soup & biscuits

Friday – Friday Night Fire – Steak, rice, carrot sticks

Canning Food and Canning Helps

This summer, I’ve shared how I canned squash, onions, & corn.

I haven’t shared any recipes, because I don’t have any canning recipes of my own. I usually stick to the recipes in the Ball Blue Book of Canning.  They didn’t, however, have instructions for canning whole onions. I had to go searching online for those instructions.

Here’s what I ended up doing with my onions:

I peeled the onions and left them whole. I boiled the onions for 5 minutes. I then placed the onions and 1/2 teaspoon salt into a pint jar (use 1 tsp. for quart jars) and filled with the cooking liquid. I processed them at 10 pounds of pressure for 40 minutes for pints & quarts.

See my little jar of onions on top of the squash? I only got one jar with the onions I had. I’m planning on making creamed onions for Thanksgiving this year with onions from our garden. I love creamed onions, and it’s a good thing the jar is in the cabinet out of sight, or it might not make it to Thanksgiving!

I did share about my canning earlier this month, along with where to buy a canning kit.

I told you about re-usable canning lids, then I found that Granny Miller shares her review of them. Since I haven’t bought any yet, it was nice to read her review. Now I know for sure I want to try them.

Sweet Preservation has canning labels you can print out. What a great way to dress up your canned goods for gift giving.

Why you shouldn’t can like your grandmother did is an important article to read for your families safety.

I love growing our own food and preserving it. I like to can, freeze and dehydrate. The growing season is not over for us yet. We have a fall planting in now. Including several rows of our favorite green beans that I plan on canning.

Storing Fruits & Vegetables

I find nothing more frustrating in the kitchen, than fruit and vegetables going bad before I can use them. Fruits and vegetables can be expensive. Throwing food away is a real budget buster. I’m not very fond of having to throw our fruits and vegetables away. Well, I give them to the chickens, but still, that’s expensive chicken feed. Of course, at least I get an egg out of the deal! lol

I have found out that one problem is I have been storing some of my fruits and vegetables wrong.

Did you know if you store apples near other fruits and vegetables, the apples will cause them to go bad faster? Conversely, if you have fruit that you want to ripen faster, put an apple next to them.

If you store ripe bananas next to green bananas they will ripen faster. If your trying to make your bananas last longer, that can be a problem.

You shouldn’t store potatoes and onions next to each other, either. Who know that 2 things that taste so good together can’t be stored next to each other?

Here’s information on how to store produce from Artichokes to Winter Squashes so they last longer.

Now I know why my lemons go bad so fast, I should be storing them on the counter, instead of the fridge!

What’s For Dinner?

Potatoes Anna

I got this recipe from a television program about 10 years ago.

Potatoes Anna

11″ oven proof skillet  (I love my cast iron skillet.)
3/4 cup unsalted butter, melted
6 baking potatoes, peeled & thinly sliced, dry well

Brush melted butter on bottom & sides of skillet. Layer potatoes in circles in pan.

 Brush on more melted butter between layers and salt & pepper. Keep adding layers.

Brown on top of stove, without stirring. Cook in oven 450* for 15 minutes. I did turn the broiler on to brown the top.

Here you can see all the layers in the pan.



These potatoes were very good. Everyone loved them. I think some onions would be good in it. But I like onions in everything. I also plan on trying Chives from my herb garden in it.
