In the Kitchen with Linda & Dinner Menu

November 5, 2013 by Linda @ Linda's Lunacy

We finally got to work on those apples this week! Now remember, we already canned 39 quarts of applesauce. So, here’s what we got done this past week.

18 half pints and 2 4 oz jars of apple syrup.

apple syrup

I’ll let you in on a little secret…..This was supposed to be jelly, but it didn’t jell. Shhhhh….don’t tell anyone because I meant to make apple syrup.  🙂

13 pints and 2 –  4 oz jars of apple butter

apple butter

14 half pints and 2 – 4 oz jars of apple jelly that actually jelled.  🙂

apple jelly

13 quarts of canned apples – 6 with cinnamon, 7 without. I had one quart that didn’t seal so we ate it.

And allllllll these dehydrated apples. 12 jars of different size, and the three trays in the dehydrator. In case your wondering, some of those jars do indeed say “Chicken Apples” on top. lol I labeled the jars with the kinds of apples inside. These Chicken Apples came from the big apple tree next to the old chicken pen. It’s not really a variety of apples. lol

That’s a lot of apple products! And I still have a lot of apples to process!

Now…. to answer the question that I get asked about a hundred times a day……….What’s For Dinner? See my menu below! [Read more…]

Saturday on the Farm – The View From My Front Porch

November 3, 2013 by Linda @ Linda's Lunacy

It’s the first Saturday of the month (lol except I’m not posting this on Saturday ! lol), so it’s time for The View from My Front Porch. It’s definitely a fall view!

The Butterfly Bush by the stack of white flower pots is practically bare. The Hardy Hibiscus to the left of that, is bare, just the branches sticking out of the ground. The only bright spot in the yard is the Burning Bush by the corner of the house.

Our Homeschool Week in Review

November 1, 2013 by Linda @ Linda's Lunacy

Well, this week has been another sick week here. Unfortunately, a stomach virus has paid a visit to our house. A couple of kids had to stay home from church Sunday. Then Monday, I was getting ready to take Abby to volleyball practice when my stomach starting bothering me. So I didn’t take her, which, of course, she was not happy about. However, volleyball practice is a thirty minute drive from home. So….no….lol

There was no band practice on Tuesday night, so that gave us sickies more time to recover. Wednesday night, Abby went with the the middle school/high school class from church to buy sneakers to donate to the local school kids.

Thursday, I managed to drive Abby to her coaches house to ride to volleyball practice. She plays on  a home school team, and none of the practices are in our town. Or in our county. Monday practice is in the town we go shopping in, about 30 minutes away. Thursday’s practice is about an hour away. So glad her coach lives only about 3 miles from us and will let her ride with him and his daughter!

So not a lot went on here this week. Abby and Zach did manage to get some school work done. Since Zach has been sick for about two weeks now, he has some to catch up on. We’re not taking a fall break until Thanksgiving week, so he’ll have plenty of time to catch up.

This week, I posted a review of Rosie’s Doll Clothes Patterns Video Course. it’s great for beginners ages 8 and up. And for those who already know how to sew that want to make doll clothes. Stop over and check it out.

I finally started working on the apples this week! We finally brought them all in the house, so that makes it easier to use them. lol You can see pictures of the last of our apples harvest over on my Saturday on the Farm post. I started with dehydrating, because it’s the fastest thing to get going. lol I now have about 4 quart jars of dehydrated apples. I’ll keep going, dehydrating a load or two a day this week.

My handy dandy tools the Snackmaster Dehydrator and the Apple Peeler/Corer/Slicer make quick work of processing all these apples.

Saturday on the Farm – Getting the Harvest In

October 26, 2013 by Linda @ Linda's Lunacy

Winter paid a visit to Kentucky this week. It got very cold here. Parts of Kentucky even saw snow flurries this week. Thankfully, lol, we didn’t! This morning when we got up it was 16 degrees on our back porch!

So before the cold weather hit, we brought it some more of the harvest. I picked what was left of the oregano and basil and put it in the dehydrator.

I’ve had my Snackmaster Dehydrator for close to 20 years now. It still works great. I really need more than three trays, though!

For God so loved the world that He gave His only begotten Son, that whoever believes in Him should not perish but have everlasting life.

For God did not send His Son into the world to condemn the world, but that the world through Him might be saved.
