Over the weekend we tried a new dish. Fried Green Pepper Rings.  A couple at church told us they made them, and since we like green peppers we knew when had to try them. I just made a quick batter to coat them in. Next time, though, I will use more seasoning in the batter. Specifically, more onion powder and garlic powder. And more salt, too. We love the fried green pepper Rings! We will definitely be making these again.

When I went grocery shopping over the weekend, I bought this large batter bowl from the Pioneer Woman. I love it! I love the way it looks. I used it today to make pancakes for lunch, and I love mixing and pouring from the same container. No more multiple bowls and measuring cups to pour the batter. The batter bowl is so pretty I’m going to leave it sitting on my counter all the time.

Wednesday – Taco Night- Beef Fajitas

Thursday – chicken – Chicken & rice, carrots

Friday – beef –    Skillet Spaghetti, green beans

I don’t normally complain….but…..

My husband and I went to Cheddar’s Casual Cafe Friday night to celebrate our 34th wedding anniversary. I had this Grilled Chicken Alfredo. Unfortunately, the chicken tasted burnt. I tried to eat just the inside of the chicken, but it tasted off. The chicken had burnt crumbs come off it and flavor the pasta underneath. I couldn’t eat but a few bites of my meal. I told the server, and he did apologize for the burnt chicken. Then said when I came back and ordered it again, if it tasted burnt to let him now sooner and he might be able to get me another piece of chicken.

That would be a fail Cheddars.

He could clearly see that I barely touched my meal and I didn’t get it to go. I think I should have been offered a discount on my meal. At the very least I feel like I should have been given a coupon for my next visit. Even a $5 off coupon would have been a nice gesture. I’m not very happy with Cheddars.

There was actual cooking going on in my kitchen last week. Promise.

 

I even canned 5 quarts of grape juice! I tried a new recipe. You simply put 1 cup of grapes and 1/2 cup sugar in a quart jar. Fill with boiling water. Process in a water bath for 25 minutes.

Now the hard part. Letting it sit for 3 months before we drink it. lol

 

We will most likely be having a cook out tonight for Labor Day. It’s supposed to be 92 here in Kentucky today. So we may possibly cancel. Who wants to sit around the fire pit when it’s in the 90’s?!

Tuesday – pizza/pasta – Skillet Spaghetti, green beans

Wednesday – Taco Night- Beef Tacos with all the fixin’s

Thursday – chicken – Chicken & rice, carrots

Friday – beef –    Smoked Sausage Skillet Dinner (recipe I’m working on!), beets

I have become fascinated with skillet meals.

 

Or maybe obsessed is the correct word.

 

Either way, I am in love with how easy they are. So far, my family has loved every one I have made.

Here are two that I made last week.

 

Skillet Chicken Alfredo

Yes, you really can make Chicken Alfredo in one pan! In about 30 minutes!

This recipe is coming soon! And it is so good!!

This Skillet Spaghetti has become a family favorite. I have made it numerous times now. With meat, or without. With hamburger, or with chicken. If I use meat, I serve it as the main dish. If I make it without meat, I serve it as a side dish to meat. The family loves it any which way. lol

This week, I made my favorite Chicken Curry dish in the slowcooker instead of on top of the stove. It came out really good. There ended up being too much sauce, but that’s not really a problem, now is it? I will definitely make in in the slowcooker again.

I’ve made fried chicken a couple of times now this summer, after a break from making it of about 17 years. lol Of course, the family loves it! I used thin cut boneless skinnless chicken breast, but next time, I will probably cut them myself instead of paying extra for it. The cream gravy is the best! It really is an easy dish to make, just a little time consuming. Using the thin cut chicken speeds up the process. Of course, you have to have mashed potatoes to go with the gravy!The first time I made this, this summer, I had the kids peel the potatoes. I made extra, and put half in the freezer. It sure was nice to just pull the mashed potatoes out of the freezer, instead of making them again!

I don’t make pork that often, but my husband picked some out at the store. These were boneless, so they took less cooking time. I  served them with oven fried potatoes, peas and carrots, and homemade applesauce.

I just love my cast iron skillet. I use it all the time. I actually have 5 cast iron skillets, but I use this big 12 inch one the most. I can get a nice brown on my fried chicken and pork in this skillet without using a lot of oil.

Chicken with potatoes, onions, and carrots, in the slowcooker is my go to meal if I don’t know what to do with the chicken. It’s quick, easy, I can put it in the slowcooker in the morning and forget about it, and my family loves it. Sometimes we have it once a week, and sometimes we go a month without having it. It depends on how busy life is, and how creative I am feeling in the kitchen.

It’s so simple, it doesn’t even need a recipe. Place cut up potatoes, carrots, and onions in the slowcooker. Use how ever many you need to feed your family. Place boneless, skinless chicken breast on top. Again, enough for your family. Season with salt, pepper, onion powder, and garlic powder to taste. I use not quite a teaspoon of salt, about 20 grinds on the pepper grinder, and about a teaspoon each of onion and garlic powder. I like a lot of onion an garlic. You could use fresh garlic, if you have it. Sometimes, I add about a half a cup of water, sometimes I don’t. lol  I cook on high for 5-6 hours, or on low all day. Cooking time depends on how much food you have, and hot your slowcooker gets.

 

I deviated from tacos a little for taco night. I made Steak and Cheese tacos. Except they weren’t really tacos. Just steak and cheese on a tortilla. We’re having it again this Wednesday because I cooked a big package of meat, and the other half is waiting in the freezer.

Because freezer meals get precedent over me having to cook. lol

I made milkshakes for the family last night. Our favorite milkshake recipe is Magic Milkshakes from Hillbilly Housewife. They are quick and easy. Just throw everything in the blender. No ice cream needed!

Friday – beef –    Pork chops, fried potatoes, carrots, homemade applesauce

We had green beans from our garden last week, the first of the year. They were so good! I know have a shopping bag full of fresh green beans to take care of.

We had chicken, carrots, potatoes, and onions in the slowcooker last week. I uses boneless, skinless chicken breasts so there isn’t a lot of chicken fat. You could certainly use other pieces of chicken, though.

This one of our favorite meals. It’s so good, it’s on the menu again this week.

Wednesday – Taco Night- beef or chicken – Steak & Cheese tacos (I guess that’s not really a taco lol, but I’m serving it on tortillas)

Thursday – chicken – Chicken, potatoes, carrots, onions in slow cooker

Friday – beef –    Baked Spaghetti, salad

Wednesday is Taco Night here. The whole family loves them. And my family will eat lots of vegetables on them! I usually only eat one taco, but last week, I was still hungry. Another taco would have been too much. So I made a lettuce taco. Without the meat. lol And it was just enough to feel satisfied.

My son thought I was crazy, though! lol Speaking of my son. On Saturday we had his birthday party. He picked the menu. He didn’t do too back. Except he didn’t pick and vegetables. Just popcorn chicken and macaroni and cheese. lol So I added some vegetables. And some cupcakes!

Monday – chicken –  Chicken, onions, carrots, potatoes in the slow cooker

Tuesday – pizza/pasta – Pizza, salad

Wednesday – Taco Night- beef or chicken – Chicken Tacos with all the fixings

Thursday – chicken – Chicken from the freezer, homemade alfredo noodles, green beans

Friday – beef –    Chili Beef and Cabbage, rice
