In the Kitchen with Linda & Dinner Menu

March 31, 2014 by Linda @ Linda's Lunacy

This past week has been a week of adjustments for me. Adjusting to not using the broken oven to cook with. When you’re used to using the oven every day, it takes a a while to get out of the habit of putting everything in the oven.

I pulled some Salisbury Steaks out of the freezer that I had frozen myself the last time I made some. I took it out of the freezer, dumped the frozen blob in the baking dish, and left it on the counter to thaw. I came back into the kitchen a little while later, and realized I couldn’t bake it in the oven. I felt a little bit dumb. lol

Things got very interesting in my kitchen this week. Friday night, Hannah was making hamburgers in the oven when she came and got me. “Mom, there’s a fire in the oven.”

Homemade Spaghetti Sauce Recipe

March 20, 2014 by Linda @ Linda's Lunacy

I love a good spaghetti sauce. A great sauce that is just as good straight off a spoon as it is on top of pasta. That is after chocolate, of course. I’ve made my own spaghetti sauce for years. It’s easy, and healthier than the jarred sauces you can buy.

I usually make my sauce with the dump method. I just start dumping everything in, taste, then season more if needed. I never measure. Well, I was teaching my daughter how to make spaghetti sauce last week, so I took the time to measure everything and write the recipe down. I poured the seasonings in my hand like I usually do, then into a measuring spoon to measure. My daughter thought I was a little crazy, but now she can make the sauce, too. Yeah for a night off from dinner duty! lol

I made Salisbury Steak last week for the first time in a long time. It turned out great. I didn’t have any beef broth, so I made sort of an onion cream sauce for it. I did use some of the drippings from cooking the hamburger patties to make it, so it had some beef flavor. I didn’t write down what I did, lol, so I guess I’ll have to make it again to do that. lol

I didn’t take any food pictures this week. Everything on last weeks menu was good, though. lol

On Hannah’s night to cook she made pizza. She had already mastered the garlic crust. And helped me assemble the pizzas in the past. So this meal isn’t a stretch for her to cook herself.

This week, she is making spaghetti with homemade meat sauce. She never made spaghetti sauce before, so this will be a new challenge for her. Especially since I don’t follow a spaghetti sauce recipe. I just throw stuff in. Taste. And throw more stuff in. lol I think while I”m teaching her how to make it, I’ll actually write down what I do. lol

Heart Healthy Meals

March 5, 2014 by Linda @ Linda's Lunacy

**This post is sponsored by Campbell Soup Company

I try to cook healthy meals for my family. I share my weekly dinner menu here every Monday. I cook supper for seven people every night, yes, seven! lol Among those seven, one is on a low sodium diet, one is a diabetic, and one can’t eat wheat. Heart disease also runs in the family. So cooking heart healthy meals is important to me, too.

Friday was my daughter’s volleyball banquet. It was a pot luck, Asian meal. I brought Mongolian Beef. It was a great evening for all the girls, coaches, and parents. It was also the boy’s basketball banquet. So it was a great night with lots of homeschoolers. Here’s a picture of the serving table. One of those many silver crockpots is mine. lol

For God so loved the world that He gave His only begotten Son, that whoever believes in Him should not perish but have everlasting life.

For God did not send His Son into the world to condemn the world, but that the world through Him might be saved.

John 3:16-17 NKJV
