Homemade Enchilada Sauce Recipe

I like to make a lot of my own kitchen helpers. Sauces, salad dressings, seasoning mixes. I like knowing exactly what is in everything. And homemade is much more economical.

So in my quest to make more of my own kitchen helpers, I developed a Homemade Enchilada Sauce recipe. I used it in these pans of enchiladas.

I told Hannah, 18, that I wanted her to start cooking supper sometimes. I’m thinking once a week. She wasn’t entirely thrilled. She can cook lots of things and makes lunches sometimes. And she’s an excellent baker. She just hasn’t cooked an entire supper by herself. She picked what she wanted to make. Potato soup and biscuits or bread.

I’m excited for a night off!

The other day, when I took the bread out of the bread machine, one look told me I had forgotten to put the yeast in. What did I do? Sliced it and served it anyway. lol. We were having soup, so it was fine. If it had been for sandwiches, it would have been a different story. lol Proof positive that I’m not perfect in the kitchen! lol Oh, It was a lot smaller than it looks in the picture. lol It was maybe three inches wide. lol

When I made chili this week, I cooked extra hamburger to freeze. I put 2 four cup bags and 1 two cup bag in the freezer. Two cups of cooked hamburger is approximately 1 pound. Knowing that makes it easier to cook a large batch of hamburger, then measure out to freeze. This is one of my convenience foods that I like to keep on hand. It makes for quick meals.

Hannah made homemade Oreo cookies for the first time. And took this picture. They came out great. The cookie isn’t as crisp as a store bought one, but not as soft as a whoopie pie. Her siblings (and parents lol) were very happy with her cookie efforts.

On Sunday, we make breakfast for lunch. Church was cancelled because of the weather, so we had time to make it. Hannah made the biscuits, my husband made the potatoes and the eggs. I made the turkey sausage, then turned it into gravy. The turkey sausage recipe is linked below, and it’s super easy. And very tasty. When I cooked the sausage, I cooked three pounds, then divided it. 1/3 went into the gravy, and the other thirds were bagged separately for the freezer for pizza toppings.

Since I try to eat gluten free, and I am out of my GF pizza crust, I thought I’d try one of those cauliflower pizza crust recipes floating around the internet. I did alter the recipe. lol I used a bag of frozen cauliflower instead of a head of fresh. I’ve seen several recipes, and they are all similar. Cook the cauliflower, process in food processor, add seasonings and cheese.  Spread into pan, cook first. Then add toppings, and cook under broiler until cheese is melted and browned as much as you like it.

It was edible. lol Pretty decent actually, for cauliflower. Now I like cauliflower. If you don’t, don’t try this recipe. As you can taste it. No amount of toppings are going to cover the cauliflower taste. My husband, and 3 out of 4 teenagers said it was good. I’m pretty sure, though, if I served this to them instead of our regular pizza I would have a mutiny on my hands. lol

If you are trying to eat grain free, and like cauliflower, this is a way you can still enjoy pizza. Would I make it again? Yes, if I was out of my regular GF crust, and just had to have pizza. It won’t be my go to crust, though.

Ooooops! You caught me licking the chocolate pudding pan! Well, I did make homemade pudding for my daughter with the sore mouth from braces. And the pan does have to get clean somehow! lol
