Making a Home – Macaroon Fail

I had some fresh coconut left that no one was eating. So I decided to make something with it. Since it’s Passover, I had to find a recipe without leaven.

I came across this recipe for Macaroons.  Only 5 ingredients! Coconut, sugar, egg whites, vanilla & salt.

First I had to grate my coconut. The grater blade on my food processor broke, and grating all those pieces of coconut by hand did not sound appealing in the least. So I put all the pieces in the food processor and processed until small pieces. It worked great.

I put the dough in the fridge to cool for about 30 minutes, although the recipe wasn’t clear on chilling the dough.

Instead of making cubes or pyramids like the recipe called for, I just spooned them out and slightly flattened them.

The recipe said if your pans were well seasoned, you could get away without using the parchment paper. Since I didn’t have any and my pans are well seasoned, I just baked them on the pans.

After baking, I tried to take the cookies off the pan. They stuck to the spatula, and fell apart. So I tried leaving them on the pan for a few minutes.

When I came back, they were firmly stuck to the pan. I had to work at getting them off the pan.

So , my first attempt to make macaroons was a fail. They were, however, delicious. We ate all the crumbs. lol

Failure in the kitchen is important. How else do you come up with really yummy new recipes? Besides, it lets the kids see that I can mess stuff up, too. And gives us all something to laugh at. While we’re eating the crumbs. lol

What’s For Dinner?

Saturday – chicken-  Cholent & homemade matzah bread for lunch, Chicken Pasta Salad for Supper

Sunday – soup & sandwich day – Chicken & rice with beans, egg salad or tuna on homemade unleavened tortillas

Monday – beef – Last night Passover – Roast in crockpot with potatoes & carrots, homemade matzah bread  


Tuesday – pizza – Pizza! Over not having any last week because of Passover, everyone is looking forward to  this

Wednesday – super simple – leftovers, salad

Thursday – chicken – Homemade Chicken Strips, mixed veggies

Friday – Friday Night Fire/Beef –  steak, broccoli, homemade Challah bread

Making a Home- Resurrection Rolls

We have been making these rolls for years now. I don’t even remember how long, but it seems like they have always been part of our Easter celebration. Since we started celebrating Passover and the Feast of Unleavened Bread, we can no longer eat these on Easter. In fact, last year, these rolls were the most missed aspect of our former Easter Celebrations. So this year, I made them before Passover. The kids were so happy!

Resurrection Rolls


1 roll Refrigerated Crescent Roll dough, in the tube
8 marshmallows
2 TBS melted butter
4 TBS sugar
1/2 tsp. cinnamon

We never measure. In fact, I, personally, have not made these in awhile, as the kids take over and want to do it all themselves. Leftover butter and cinnamon sugar can be used on toast, so we don’t mind if there are leftovers.

Combine the cinnamon and sugar in a small bowl. To assemble, separate the crescent roll dough.

 

Dip a marshmallow into the melted butter, then into the cinnamon sugar.

Place onto the crescent roll. Seal the edges of the crescent roll securely.

 

If they are not sealed well, the marshmallow will leak out onto the cookie sheet while baking.

Bake according to package directions.

 

As you can see, some of ours opened while baking. That’s ok, they are still delicious!

So yummy!

You can tell the Easter story while assembling these rolls, that is, in fact, why they are called Resurrection Rolls. As your assembling the rolls, tell the kids that the marshmallow represents Jesus. The melted butter and the cinnamon sugar represent the oil and spices they anointed Jesus with. The crescent roll represents the tomb. After cooking, the empty roll represents the empty tomb.

My kids would actually eat these everyday, they are that good. Everyone that I have served these to, loves them. You will be glad you tried them, even if it’s not around Easter time when you make them.

Tuesday – pizza – No pizza tonight, Feast of Unleaven Bread starts, Lamb, potatoes, carrots, homemade matzah bread

Wednesday – super simple – leftovers, salad, homemade matzah bread

Thursday – chicken – Chicken & Rice with beans

Friday – Friday Night Fire/Beef –  steak, salad, broccoli & homemade matzah bread

Making a Home – Gluten Free Chocolate Cake

I got this recipe for Gluten, Dairy & Egg Free Chocolate Cake from  I’m an organizing Junkie. She also has a recipe for frosting, and for making your own gluten free baking mix on the same page.

I have just recently gone gluten free, so I’m trying lots of recipes. This cake is so good! Chocolate cake is my favorite cake.  So I know what I’m talking about. This cake has great flavor & texture. The kids that tried it liked it as well. They wanted more than a taste. 🙂

I only made half her recipe, since I’m the only one gluten free. So here’s what I did:

Gluten, Dairy & Egg Free Chocolate Cake from I’m an Organizing Junkie

1 1/2 cups gluten free flour – I used a store bought gluten free flour
1 cup sugar
1 cup cold water
1/3 cup vegetable oil
1/4 cup cocoa powder
1 teaspoon baking soda
1 teaspoon white vinegar
1/2 teaspoon salt
1/2 teaspoon vanilla

In a large bowl, combine all ingredients and beat until well combined. I use a whisk, (since my mixer died). Pour into a greased 8 x 8 pan. Bake 30 minutes at 350* until toothpick comes out clean.

I think this cake is great for snacking without any frosting. It would be good with frosting or a non dairy whipped topping (or whipped cream if you can have it). I ate a piece (ok….two!) and I put the rest in the freezer. Cut into pieces, and layers separated by wax paper, so I can take out one piece at a time.

I’m glad I found this cake! It’s really good. yummo…….

What’s For Dinner

A menu plan funny:  Whenever the kids ask me whats for dinner, I always say “Food”. lol Because someone always has an opinion about what’s for dinner. They have now figured out a way around my secret menu.

The come & check my blog to see what’s for dinner!

Then come and tell me their opinion about what we’re having. lol

Saturday – chicken-  Cholent for lunch, Baked Chicken with broccoli & challah bread for supper

Sunday – soup & sandwich day – tuna fish sandwiches, egg salad sandwiches

Monday – beef – Spaghetti with Meat sauce, salad, green beans


Tuesday – pizza – homemade pizza…..yum!  carrot sticks

Wednesday – super simple – leftovers, salad

Thursday – chicken – Chicken & Rice with beans

Making a Home – Herbed Cream Cheese

I was looking for a snack to make, and this is what I can up with.

Herbed Cream Cheese

8 oz cream cheese, softened
1 1/2 teaspoons fresh chives, chopped
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon thyme
1/8 to 1/4 teaspoon dill  (according to your taste)
a pinch each of salt & pepper (again, according to your taste)

I used chives from my garden, chopped them, and added to all the other ingredients.

Mix well. Can be served right away, but the flavors will blend together and taste even better if you left it sit in the fridge for an hour or two before serving.

Serve with the crackers of your choice.
