Chocolate Marble Loaf

October 12, 2010 by Linda @ Linda's Lunacy

I’ve been making this cake, Chocolate Marble Loaf,  longer than I’ve had kids. And I’ve have kids forever. Ok, I’ve had kids for 24 years, and some days, that’s forever! lol Anyway, this makes an excellent cake. Very moist and flavorful. No frosting needed.

Chocolate Marble Loaf

1 3/4 all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter
1 cup sugar
1 teaspoon vanilla
2 eggs
2/3 cups milk
3 tablespoons cocoa powder
1 tablespoon oil
1/2 teaspoon baking soda
2 tablespoons hot water
Preheat oven to 350* Grease and lightly flour a 9x5x3 inch loaf pan. Combine flour, baking powder and salt. In another bowl, beat butter for 30 seconds. Add sugar and vanilla and bit until fluffy. Add dry ingredients and milk alternately to butter – sugar mixture. Beating well after each addition. In another bowl, combine the cocoa, oil, baking soda and 2 tablespoons hot water. Stir in 1/3 of the batter.

Spoon light and dark batters alternately into loaf pan.

Zig Zag spatula through batter.

Bake for 45- 50 minutes or until done. Cool 15 minutes. Remove from pan and cool completely

This will make 12 slices, of course that depends on how thick you slice it. This is delicious served warm.

This cake is awesome by it self. Every slice looks different. For a fancier, and even more delicious desert, drizzle with homemade chocolate sauce and top with whipped cream. Too bad I didn’t have either of those on hand today. We just ate it plain, and no one complained. They all wanted seconds.

This recipe makes one loaf. Today, I doubled the recipe, which is why there are two in the pictures. I wrapped one for the freezer.

Now when someone comes over, I can pull out a delicious cake. Just defrost for a few minutes, slice and serve.

What’s For Dinner

October 11, 2010 by Linda @ Linda's Lunacy

No fancy meals happening here this week. My husband wants some Jag to take for lunches, so I’m skipping chicken tonight to make the Jag. I’ll make a double batch, so he’ll have plenty for lunches. This is his favorite meal, so he won’t mind having it for supper and lunches.

The meatloaf for Friday is already in the freezer. I do have to cook the chicken for Thursday’s casserole. I have a 10 pound bag of leg quarters to cook. Lot’s of meat and broth going in the freezer.  🙂 I think I’ll make an extra chicken and rice casserole to stash in the freezer, too.

The beef for the burritos is already cooked and shredded in the freezer, I just have to cook the pinto beans. Which I’ll also make extra for the freezer.

Saturday – pizza night – Pizza and carrot sticks

Sunday – sandwich day – Leftover Pizza, noodles

Monday – chicken – Jag, green beans

Tuesday – beef – Beef & Bean Burritos

Wednesday – super simple – left-overs, salad

Thursday – chicken – Chicken & Rice casserole, brocolli

Friday – Friday Night Fire/Beef – Meatloaf, Challah Bread, corn

Cooking With the Computer

October 6, 2010 by Linda @ Linda's Lunacy

I like to keep a lot of my recipes on the computer instead of printing them all out. I used to walk back and forth between the kitchen and the schoolroom where the computer was to check recipes. Now that I have my laptop, I put it on the table. That makes it very convenient.

Cooking with the Computer

But then I discovered another problem. Using the computer with sticky or flour covered hands. I came up with a solution.

I covered the keyboard with plastic wrap while I was cooking. I can scroll down to read the recipe, and stop and re-start a video. Like in this picture, where my daughter was watching a video on braiding bread while following along.

We can follow along, without getting flour in the keyboard. When we’re done, we just roll up the plastic wrap, and throw it away.

The World’s Easiest Candy

October 5, 2010 by Linda @ Linda's Lunacy

This World’s Easiest Candy is so good! And it really is the easiest candy to make!

Kids, and adults, alike love this candy! It will be a hit whether you’re taking it to someone, or making it for your family.

The World’s Easiest Candy

1 cup butter
1 cup brown sugar
1 sleeve saltine crackers
1 12 oz package chocolate chips

Spray a cookie sheet with oil, or line pan with foil. I really have never had trouble removing this from the cookie sheet, though. Here’s the kind I use…..

Line cookie sheet with a single layer of saltine crackers. If you don’t use the whole sleeve, that’s ok. I have one cookie sheet that is a little bigger, and I use a few more crackers from another sleeve, breaking them in half as needed to fill the pan.

Bring butter and brown sugar to boil and boil for 5 minutes. Evenly poor this mixture over the crackers. It doesn’t have to be perfect, as it will spread in the oven.

Bake for 5-10 minutes at 350*. You’ll want to watch, so it doesn’t burn. Remove from oven when the mixture is nice and bubbling.

As soon as you remove it from the oven, evenly sprinkle the chocolate chips over the top. Wait a minute for the chocolate to melt, then spread with a knife or spatula. Be careful to not move the crackers too much.

At this point, you could sprinkle on nuts, mini chocolate chips, candy pieces, sprinkles really anything you want. It is very good plain, so you don’t have to do this. It does make the candy look pretty for holidays, and gift giving, though.

Cool candy completely before cutting. To speed up the cooling, you can put it in the fridge for a few minutes. I usually do. 🙂

My family loves this candy. And it quickly disappears at any gathering I take it to.

You can also use different kinds of crackers. I’ve seen this candy made with club crackers and even cheese crackers. You can also use different kinds of chocolate chips, and as I said above, different toppings.

Since it takes just a few minutes to make, it’s the perfect last minute desert for any dinner or gathering.

Greasing Pans – A Kitchen Tip

September 29, 2010 by Linda @ Linda's Lunacy

I like to cook and bake. a lot. I have always used the spray can of oil to grease my pans. Well, except cake pans, then I would use a paper towel and shortening.
In my never ending quest to cut my grocery bill, when my last spray can ran out, I didn’t replace it. I also very rarely buy paper towels anymore.
Those two things really changed the way I greased my pans. lol
I keep vegetable oil in a dispenser next to the stove. (The good olive oil is hidden in the cabinet, away from other cooks who would use to much of it. It’s like liquid gold. lol) So I now use a pastry brush to spread the oil in my cooking or baking pans. The brush I have is silicone, and it’s easy clean up.
This saves money over buying the spray cans and paper towels. It’s quick, easy, and works great!

For God so loved the world that He gave His only begotten Son, that whoever believes in Him should not perish but have everlasting life.

For God did not send His Son into the world to condemn the world, but that the world through Him might be saved.
