What’s For Dinner?

This week is going to be very different. This week is Vacation Bible School Week! We love VBS!

Our church feeds everyone (adults included) before all the fun starts. So I don’t have to cook supper all week!

I will be serving salad to everyone before they leave. I have one daughter who won’t eat any processed food So I’ll have chicken to put on her salad.

I plan on trying to get a lot of food made for the freezer this week. Since I no cook week, I might as well use that time to stock the freezer.

So I have no menu this week. But here are a few of the things I hope to stock the freezer with this week.

Homemade Baked Beans

Homemade Tortillas

BBQ Sauce

Diced Onions

Carmelized Onions

Some kind of cookies

and a few gluten free goodies for me

Saturday – Sabbath- Make ahead meals- Dinner on church outing

Sunday – soup & sandwich day – Church homecoming dinner, sandwiches for supper

Monday – chicken – Baked chicken, baked potatoes, salad

Tuesday – pizza/pasta – Homemade Pizza, salad

Wednesday – super simple – Chicken and rice in the crockpot, zucchini

Thursday – beef – Spaghetti with meat sauce, green beans

Friday – Sabbath Dinner -Hamburgers over fire, potato salad

Thinking About Cooking….

I’m sitting here thinking about cooking. Since I don’t feel well enough today to actually do any cooking, I’m planning.

Can I call this post a kitchen planning session so I can feel productive? lol

I have been wanting to try making some gluten free oatmeal bread for a couple of weeks now. I want to use whole oatmeal, as well as oat flour. Using little to no rice flour. I want to use yeast so I can get a nice rise to the bread. I’m envisioning a nice, soft, flavorful bread that I can use for anything. Toast, sandwiches, etc.

Is that too much to ask?  Did you know that toast smells incredibly awesome when you can’t eat it?  I guess that goes for anything you can’t eat.  I guess the food is always better on the other side of the table…..

Has anyone ever made oatmeal bread before? Got any tips or recipes to share?

 

Even though I don’t feel well enough to cook, I still have to make supper.  According to my menu, we’re having spaghetti with meat sauce tonight. I already took the cooked hamburger out of the freezer. Such a time saver! I also pulled out a bag of frozen shredded zucchini from our garden last year to put in the sauce. So I only have to dump the meat, zucchini, tomato sauce and some seasonings into a pan for sauce. Only a few minutes more than opening a jar, and so much better! Pasta is easy enough to cook. Of course, I have to make two kinds. GF for me and regular for everyone else.

Except tonight, I think I’ll get one of my sous chefs to cook.  🙂

Monday – chicken – Chicken taco salad with homemade sour cream

Tuesday – pizza/pasta – Homemade Pizza, carrot sticks

Wednesday – super simple – Chicken Parmesan in crockpot, Rice, zucchini

Thursday – beef – Spaghetti with meat sauce, green beans

Friday – Sabbath Dinner -Hamburgers over fire, potato salad

No Bake Peanut Butter Oatmeal Cookies

My family loves the No Bake Chocolate Peanut Butter Cookies that I make.  At a recent event, we got to try No Bake Peanut Butter Cookies. We all loved them, so I adjusted my recipe to make some.

They are so good! I forgot to count how many this made, but I think it was around 35 cookies. Of course, that depends on how big you make them. I made this batch this afternoon at around 3, and shortly after supper, they were all gone! That’s why I can’t go count them to see how many it made. lol

No Bake Peanut Butter Oatmeal Cookies

No Bake Peanut Butter Oatmeal Cookies

2 cups sugar
1/2 cup milk
1/2 cup butter
1/2 tsp vanilla
2 1/2 cups oatmeal
3/4 cup peanut butter
1/4 tsp salt

Put first three ingredients in pan. Boil for 1 and 1/2 minutes. Remove from heat, then add the remaining ingredients. drop by spoonfuls on waxed paper (or aluminum foil) and cool.

Tuesday – pizza/pasta – Spaghetti with meat sauce, green beans

Wednesday – super simple – Turkey soup in crockpot

Thursday – beef – Sloppy Joes, carrot sticks

Friday – Sabbath Dinner -Hot dogs over the fire, potato salad, marshmallows

Friday – Sabbath Dinner – Hamburgers over fire, salad
