Reusable Canning Lids

Canning your own fruits, vegetables, jams and jellies can save a lot of money. Some people can meat, poultry and butter, also. I haven’t, yet. I do have a pressure canner now, and would like to try canning meats and soups. Oh, and spaghetti sauce.

Once you buy your jars, as long as you take good care of them, your only yearly expense is buying the canning lids. Well, not counting the food to put in the jars, if you buy fruits and veggies from local farmers.

I was so happy to find this site, Reusable Canning Lids. I haven’t ordered any yet, as I just found it. I plan on it, though.

These lids will save money over buying new lids each year.

What’s For Dinner?

I followed last weeks menu pretty closely. Which means it was a good week. lol I’m trying a new recipe for Cabbage Casserole that I got from a friend. I don’t have a recipe for the chicken quesadillas. I just throw come chicken in with the cheese. lol

Now for this weeks menu:

Saturday – beef – Roast in the crockpot, macaroni salad, carrot sticks

Sunday – sandwich day – Pizza

Monday – chicken – Roasted chicken leg quarters, rice, salad

Tuesday – beef – Cabbage Casserole

Wednesday – super simple – breaded fish fillets, salad

Thursday – chicken – Chicken Quesadillas, salad

Friday – Friday Night Fire – hamburgers, lettuce, tomato, macaroni or potato salad

Cabbage Casserole

1 lb ground turkey
1/2 lb italian ground turkey
onion
1/2 bottle vegetable juice
two cans tomato soup
2 cups chicken broth
1 cup uncooked rice
1-2 tblsp cider vinegar
3-4 tblsp brown sugar
1 head cabbage chopped

brown the meat and add onion – saute; add juice, soup, broth, rice vinegar and sugar (to taste) – adjust if necessary; add cabbage; bring to boil and simmer until cabbage is tender and rice is cooked.

I got this recipe from friend.

Saturday On The Farm

Saturday on the Farm

This week, we’ve been eating spinach and lettuce for the garden. So good!

Over the winter, I had to take all the rocks from my herb garden to use in another project. So on Thursday, I put new rocks in. Abby helped me carry and place them. Eventually, there will be a block wall 2 blocks high, with cap stones on top, so I can sit on it while tending my herbs. But for now, I like the rocks.

The horehound didn’t come back this year. So I will have to plant more. I have never been able to get rosemary to grow in this garden, but I shall try again this year. I also need to get the annual herbs planted.
This little tin man was made by a local man. He needs another coat of paint this year, looks like. His joints are starting to rust. lol  In front of the tin man you can see a clover plant. This plant has lots of 4 leaf clovers, and we’ve even found a few 5 leafs on it. 

There are a few volunteer wild strawberries in this garden. Last year, we got a few little strawberries on them. I didn’t see any blossoms this year.

I put together these little planters, and planted some herbs in them. You can see the little seedlings in the bottom pot.

The feverfew is blooming. The original plant was in the herb garden, but it seeded itself in the planter between the herb garden and the stairs, you can see it in the first picture.

The Ecinacea – purple cone flower – are getting so tall. There are a lot of buds on them. There is another little one on the right hand side of the big one. You can’t see it, because the chives have grown so big. Guess its time to trim them back.
You’ll have to excuse the weeds, the free range chickens have something against mulch. I have to get some more garden netting to put over the mulch before I can put any out. Otherwise they spread it all over the yard.

This has been a good week. I have flowers blooming. I got a new kitchen faucet. Read some books. Ate some salads. Took care of some bored kids. And got a new laptop!

Flaunt Your Flowers

After nothing being in bloom last week it was nice to be able to take pictures of actual flowers this week.

The Day Lillies in the Bible Garden are blooming.

These lillies are so pretty! We had such a storm last night, that I’m actually surprised that these are still standing. The Hibiscus didn’t fare so well, they are laying down. Anyway, you can see rain drops on the flowers still.

The white wild rose bushes in front of the house already bloom, but the pink ones are blooming now. My husband found all these wild rose bushes and transplanted them into the garden in front of the house. We do have to keep them trimmed back as they grow wild. (pun intended haha)

And a wide shot of the other one. Yeah, those are weeds. sigh…..

Szechuan Zucchini

I don’t remember where I found this recipe at, I printed it online from somewhere, but it was very good. We all liked it.

Szechuan Zucchini

1/3 cup hot water
1/3 cup smooth peanut butter
2 tsp soy sauce
2 tsp white wine or rice vinegar
2 scallions – chopped
1 clove garlic – minced
1 tsp splenda
1/4 tsp red pepper flakes – to taste
1 1/2 pound zucchini
1/4 cup butter

In a medium bowl, blend the water and peanut butter. Stir in the soy sauce, vinegar, all but 1 tablespoon of the scallions, garlic, splenda and hot pepper flakes. Set aside.

Use a vegetable peeler to slice the zucchini into thin ribbons. Saute the zucchini ribbons in the butter until they are al dente, or crisp tender. Discard the excess liquid and combine the sauce with the hot zucchini ribbons in a heated serving bowl. Garnish with the 1 tablespoon reserved scalllions and serve immediately.

My Notes:

I left out the red pepper flakes, and I used white vinegar. You could use sugar instead of the splenda. It would also be good with chunky peanut butter, and garnishing with chopped peanuts before serving.
