In the Kitchen With Linda – Dinner Menu

If you had been in the kitchen with Linda this week, you would have been able to watch Hannah and I make Banana Bread. Hannah mixed up a triple batch, and then I remembered that I had thrown away one of our bread pans. So I got out the book on my bread machine, and sure enough, you can bake fruit breads in it. The loaf at the top of this picture was baked in the bread machine, and the other two were baked in the regular oven. All three of these loaves are residing in my freezer. 🙂 I’m really shocked that we haven’t eaten any yet! lol

Hannah also made two Pineapple Upside Down Cakes using my homecanned Zucchini Pineapple and homecanned cherries. So good! And so gone! lol

The only major plans I have in the kitchen this week is to can some cherries. I really want to make some Chocolate Raspberry Sauce with the raspberries in the freezer from last years harvest. Hopefully, I can bot both of those done this week.

Monday – chicken – Baked chicken, baked potatoes, green beans

Tuesday – pizza/pasta – Spaghetti with meat sauce, broccoli

Wednesday – beef – Cookout at church

Thursday – super simple – Chicken Pasta Salad

Friday – Sabbath Dinner – Meatloaf, rice, peas, corn

In the Kitchen with Linda

Hannah and I spent last week stocking the freezer with breakfast items. She made Banana muffins, Banana chocolate chip muffins, Blueberry muffins, Chocolate Banana muffins, and plain muffins with brown sugar topping. She did the mixing and baking, I was her support staff. Putting the liners in the pans, getting whatever she needed, and most importantly, washing the dishes.

We put 13 dozen muffins in the freezer, with a few left over for tasting. We put a variety in each bag, with 12 muffins in each. That way, we can pull out one bag for breakfast, it will be the right number, and everyone will find something they like.

I made gluten free chocolate banana muffins, and two batches of Gluten free blueberry muffins.

Hannah also made a triple recipe of English Muffins. We put 30 in the freezer, with a couple left for tasting. I thought I had taken a picture, but can’t find it. They look like whole wheat english muffins. lol

It took us a few days, but we are now well stocked with muffins. I would still like to do a pancake and waffle session. Later this week, when we’re having biscuits for supper, I’ll be making a lot to put them in the freezer.

Today, I cooked the homemade turkey sausage for tomorrows pizza. I used two pounds of the ground turkey to make 22 sausage patties for the freezer. They’ll taste good with those biscuits!

Sunday – soup & sandwich day – Sandwiches- chicken & turkey with Provolone & Swiss cheese, and homemade bread

Monday – chicken – Baked Chicken, baked potatoes, peas, salad with homemade Italian salad dressing

Tuesday – pizza/pasta – Pizza with garlic crust, and homemade turkey sausage, carrot sticks

Wednesday – beef – Taco Salad with homemade taco sauce

Thursday – super simple – Bean soup from my home canned beans, homemade biscuits

Friday – Sabbath Dinner – Taking Father in law out for a birthday dinner

In the Kitchen with Linda – Dinner Menu & More!

One of the highlights in my kitchen this week was a delivery of linguica. We’re from Massachusetts, and linguica is a very popular meat there. you can even get it on your pizza. Here in Kentucky, it’s not available anywhere. The only way we can get it is to order online. Or have someone coming from Massachusetts bring us some. lol My husband loves linguica, so I usually try to have some delivered every year and stretch it as far as I can.

So he’ll get some linguica at our Memorial Day cook out, Labor Day cook out, and a couple of other times over the summer. At least one time, he’ll get a linguica pizza.

This week, Hannah, 17, made homemade chocolate chip cookies. For which her siblings were very thankful.

She also made cheesecake, which her father and I really appreciated. 🙂 her siblings love it, too. One cheesecake is enough for us all to have one piece, with one left over for the cook the next day. She thoroughly enjoys being the only one to have a piece the next day. lol

In the Kitchen with Linda – Dinner Menu & more!

The most exciting thing that happened in my kitchen this week was getting an under-sink water filter system. Isn’t it pretty?

Well, that’s the visible part, the rest is under the sink. We’ve been using a water filter pitcher. For a family of our size, that means that the pitcher is always empty when you want a drink. lol This new filter and faucet has been so much more convenient. I’m loving it!

In other kitchen happenings, on Saturday night I remember at 9:30 pm that I had to have 10 pounds of mashed potatoes ready to leave the house at 9:30 am the next morning. Fail. I got my 17 year old daughter to help me peel the potatoes, and I got them done that night. phew. Now I have to make 5 pounds of mashed potatoes today for a dinner at church tonight. I think we need to come up with something less time consuming to sign up to bring. lol

I was able to get in the kitchen and cook something besides meals. Well, I did eat some of the gluten free corn bread muffins I made with my supper one night. I put a big container of these in the freezer for me to eat later. 🙂 Here’s the recipe I used. Whole Wheat Sweet Cornbread. To make gluten free, I use 1/2 cup all purpose gluten free flour and 1/2 cup oat flour in place of the 1 cup whole wheat flour. I have also used 1 cup of the all purpose gluten free flour. I like the texture and nutrition better with using the oat flour. Next time, I want to try using all oat flour.

I canned quite a few jars of beans a few months ago, and I have enjoyed the convenience of just opening a jar. yes, I know you can buy canned beans in the store. lol It’s so much cheaper to cook dry beans, though, and they have much less salt than store bought canned beans. Anyway, I reached deep in the cabinet to get  a jar. When I was pulling it out, the lid was loose, and the liquid was spilling out. When I got the jar out of the cabinet it looked like this.

Yuck! Yes, that is mold on top of the beans. Disgusting! I’m not sure how this happened, as I’m super careful to check the seals on the jars. I check several times, then I wash the jars before putting them away. Including all around the lids. I take the bands off before storing, as is recommended. So I’m not sure when the lid was loosened, as I would have discovered it while washing the jar. I’m sharing this as a reminder to those that can their own food, check and double check. Then when you are ready to eat the food, check the seal again. Keep your eyes open for any signs that the food isn’t good. I always smell the food before I use it, too. Even though they say you can’t see or smell botulism, there are other bacteria that you can see or smell that will also make you sick.

Yes, I’m going to continue to can my own food, including beans. And yes, I’m going to continue to be super careful.

I don’t have any pictures to share this week. I didn’t do anything picture worthy. Well, I prepared all the meals, but they were the usual, run of the mill meals. My daughter did made another Pineapple Upside Done Cake this week. That disappeared too fast to get a picture. lol  Now that I finished our taxes, I’ll have more time to spend in the kitchen this week. Any suggestions for what I should make?

I made a Frittata for dinner one day last week. It’s a great way to stretch leftover meat and veggies into another meal. And my family loves it.

My 17 year old daughter was busy in the kitchen this week as well. She made a Pineapple Upside Down Cake, using my home canned cherries and zucchini pineapple. Yummy!

She also made an Angel Food Cake. This was the first time she had made one before and it came out great. We don’t have an electric mixer, so she beat all those eggs by hand with a whisk! Doesn’t it look great? She served it with homemade chocolate sauce. I think it’s time for her to make another one! lol
