Gluten Free Applesauce Gingerbread

Warm gingerbread is a nice, comforting treat on a cold winters evening. Applesauce is a nice addition.

 

You can substitute an equal amount of wheat flour for the gluten free all purpose flour. I have made it both ways many times and it comes out great either way.

 

Gluten Free Applesauce Gingerbread - can also be made with wheat flour!

 

Gluten Free Applesauce Gingerbread

 

1/2 cup melted butter

1/2 cup firmly packed brown sugar

1/4 cup molasses

2 large egg

1/2 cup applesauce

1 cup gluten free all purpose flour

1 teaspoon baking soda

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

 

In a large bowl, combine melted butter, brown sugar and molasses. Beat in egg. Stir in applesauce.

Add flour, baking soda, ginger and cinnamon to batter. Mix thoroughly.

Pour into greased and floured 8×8 inch pan or 8 inch round pan.

Bake at 350* for 30-35 minutes or until toothpick inserted in center comes out clean.

Remove from oven and allow to cool. If desired, after 5 minutes of cooling, you can invert gingerbread onto a wire rack. When cool transfer to serving plate.

 

Serve with whipped cream or your favorite non dairy whipped topping, if desired.

 

This recipe can be doubled and baked in a 9×13 pan.

Sunday – soup & sandwich day – Chicken sandwiches or grilled cheese sandwiches, homemade pickles, celery sticks

Monday – chicken – Jag, cooked carrots

Tuesday – pizza –  leftovers, skipping pizza night this week

Wednesday – super simple – 1st night of Chanukah, Roasted whole chicken, green beans, potato latkes, homemade applesauce, sour cream

Thursday – beef –  Chili on baked potatoes

Friday – Sabbath Dinner –  Roasted chicken, baked potatoes, squash casserole using home canned yellow squash

Monday – chicken –  Stir fry – chicken, frozen stir fry veggies and rice

Tuesday – pizza –  Homemade pizza, carrots, celery

Wednesday – super simple – leftovers

Thursday – beef –  Spaghetti with meat sauce

Friday – Sabbath Dinner –  Roasted chicken, baked potatoes, squash casserole using home canned yellow squash

Wednesday – super simple – leftovers

Thursday – beef –  Meatloaf, oven fries, green beans

Friday – Sabbath Dinner –  Homemade Chili over baked potatoes, brocolli

What’s for Dinner?

Another Thanksgiving feast come and gone. You really must try the carrot souffle linked below. It’s awesome!

 

Saturday – Sabbath- Make ahead meals- Turkey Gravy on mashed potatoes,carrot souffle (made gluten free), orange spice sweet potatoes

Sunday – soup & sandwich day – Taco Beans and rice

Monday – chicken –  Roasted chicken, baked potatoes, corn

Tuesday – pizza –  No pizza this week.  🙁  Turkey soup instead

Wednesday – super simple – leftovers

Thursday – beef –  Baked potatoes with homemade chili and cheese, green beans

Friday – Sabbath Dinner –  BBQ chicken, mashed potatoes, cooked carrots

Homemade Sloppy Joes

I love Sloppy Joes. And homemade is the best!

Homemade Sloppy Joes

 

Homemade Sloppy Joes

2 pounds hamburger (or ground turkey or a combination)

1 medium onion, diced

1- 29 ouce can tomato sauce

2 tablespoons worcheshire sauce

2 tablespoons apple cider vinegar (or less, to your taste)

3 tablespoons sugar

salt and pepper to taste

 

Brown hamburger and onions until cooked through. Add remaining ingredients. Simmer for 15-2o minutes.

I used pre-cooked hamburger that I like to keep in the freezer. In that case, I add the onions and remaining ingredients and simmer until onions are done, checking often and adding water as needed.

You can also prepare in the crockpot: Add cooked hamburger and other ingredients, cook on low until needed.

You can also add diced green peppers if your family likes those in Sloppy Joes.

 

I served mine on gluten free garlic french bread. I prefer to eat my Sloppy Joes with a fork.  🙂

Saturday – Sabbath- Make ahead meals- Girls had a volleyball tournament- they packed sandwiches & homemade pizza. Those at home had leftovers.

Sunday – soup & sandwich day – Bean soup and grilled cheese sandwiches

Monday – chicken –  Spaghetti with meat sauce, broccoli (skipping chicken this week)

Tuesday – pizza –  Homemade Pizza, carrot sticks

Wednesday – super simple – leftovers – We’ll start cooking for tomorrow

Thursday – beef – Thanksgiving – Turkey, mashed potatoes, stuffing (regular & gluten free), home canned green beans, home canned corn, carrot souffle (made gluten free), orange spice sweet potatoes, homemade dinner rolls, cranberry sauce, creamed onions, chocolate pie, pumpkin pie (thinking about trying Rectangular Pumpkin Pie this year), gluten free bread pudding and homemade apple cider made from our own apples! WOW, that’s a LOT of food! lol

Friday – Sabbath Dinner –  LEFTOVERS!  lol
