Zucchini and Yellow Squash Casserole Recipe

This is a super simple casserole to make. The whole family loves it, so it’s a great way to get them to eat lots of veggies.

There is no written recipe. The amounts depend on how big your yellow squash and zucchini are and how much you want to make. You can use only one kind of squash if that is what you have on hand. You can also use homemade ranch salad dressing instead of store bought.

Zucchini and Yellow Squash Casserole

Slice the squash, place into bowl. Coat with bottled Ranch Salad Dressing. If you like saucier casseroles, use more.  My kids like extra sauce. I usually use enough squash to fill a 9×13 baking dish, and would use a whole bottle of Ranch. Pour into lightly greased baking dish.

Top with your favorite grated cheese. We use Mozzarella. For browner cheese, put on casserole before you put it in the oven. Otherwise, you can wait to put the cheese on the last 10 minutes of cooking. You can also sprinkle with bread crumbs before baking for a crispy crust on top.

Bake in a *350 oven for 30-45 minutes until tender, cooking time depends on the size of your pan and the thickness of your slices.

BBQ Chicken Pizza

Someone commented on my menu a few weeks ago suggesting I make BBQ Chicken Pizza. Well, I tried it, and the whole family loved it. Easy and so good!

We made our favorite garlic pizza crust recipe, then topped it with our favorite homemade BBQ sauce. You can also use store bought crust and BBQ sauce, we just like our homemades better. We then topped it with mozzarella cheese and cooked chopped chicken. We also put onions on some. That was good. I think I’ll try green bell peppers next time, too.

 

The crust in the picture was made with half white flour and half whole wheat flour.

The chicken doesn’t have to be cooked in BBQ sauce as the sauce on the crust has plenty of flavor. But you good it in bbq sauce if you want a bigger bbq punch. When your cooking chicken, just cook an extra piece for the pizza. Cooked chicken can be chopped and frozen. Then when your ready for pizza, take it out to thaw. Makes pizza night even easier.

 

BBQ Chicken Pizza Recipe

There is no recipe to print out. Just get the number of crusts you need for your family, a bottle of BBQ sauce, 1/2 to 1 cup of cooked chopped chicken for each pizza (amount needed depends on the size of the crust), and a package or two of mozzarella cheese.

What’s For Dinner?

I ended up making Sausage Pizza for pizza night last week, using my homemade turkey sausage. I think I’ll make BBQ Chicken pizza again this week, so I can share it with you. A reader sent me directions for how she makes it, and it was so good. I made it two weeks ago, but forgot to take a picture!

 

The Menu:

Saturday – Sabbath- Make ahead meals- Fish fillets and yellow squash

Sunday – soup & sandwich day – Dinner at church, Birthday Cake!, then turkey or tuna sandwiches for supper

Monday – chicken – Baked chicken, Yellow Squash, quinoa

Tuesday – pizza/pasta – homemade pizza

Wednesday – super simple – stir fry

Thursday – beef – Taco salad or taco pasta salad, I’ll see what I feel like making on Thursday lol

Friday – Sabbath Dinner – Sweet and Sour chicken, rice, yellow squash

What’s For Dinner?

Our garden isn’t ready yet, but our neighbors have been blessing us with some of theirs. So we’re eating lots of great home grown veggies this week (and last week, too!)

As part of our Olympics study, we’re eating a couple of traditional English meals this week. Fish and chips (fries), as well as bangers and mash. Bangers and Mash is sausage links and mashed potatoes. An easy meal, especially since I get my kitchen helpers to peel the potatoes!

 

Saturday – Sabbath- Make ahead meals- Fish and Chips, salad

Sunday – soup & sandwich day – Egg sandwiches, turkey sandwiches, lettuce, tomato

Monday – chicken – Baked chicken, Yellow Squash, corn on the cob

Tuesday – pizza/pasta – homemade pizza ….hmmmm…..what kind?, salad

Wednesday – super simple – Bangers and Mash, green beans

Thursday – beef – Tacos with all the fixings

Friday – Sabbath Dinner – Sweet and Sour chicken, rice, yellow squash

What’s For Dinner?

I took last week off! I didn’t cook for anyone! The three youngest kids were at church camp from Monday morning to Friday night. So I decided to take the week off, since the remaining family members are perfectly capable of cooking for themselves. My sons, 17, 26 and my husband. My 17 year old ended up doing most of their cooking. They  had food liked Tater Tot Casserole, homemade cheeseburgers and pizza from the local pizza place.

I did cook for myself, and had food like zucchini, yellow squash and onions sauteed in coconut oil and added cooked chicken from the freezer. yum!

I’m back in the kitchen this week, though. I choose food that if I don’t feel well enough to stand in the kitchen, are easy for the kids to help me with. My 16 year old daughter is the pizza crust maker, so no worries. there.

Monday – chicken – Baked chicken, Yellow Squash & Zucchini Casserole

I read this past week, that the Pepper Jelly I made last year is great to use on carrots for a different glazed carrots. I can’t wait to try it! Has anyone ever tried this before?
