Canning Peaches

I canned peaches for the first time today. I should say, we. As I wouldn’t have been able to get it done if it wasn’t for my two daughters help. It was pretty easy, too.  🙂

We bought a box of Georgia Peaches for $20 and got 10 quarts of peach halves. These will taste so good this winter! Peach Cobbler yum! And my kids like to eat canned peaches just the way they are, too.

I followed the directions from the Ball Blue Book. Here’s directions on how to can peaches from PickYourOwn.org.

What’s For Dinner?

Saturday – Sabbath- Make ahead meals- leftover Chicken Parmesan, rice, green beans

Sunday – soup & sandwich day – Tuna and BBQ Pork sandwiches

Monday – chicken – Hamburgers over fire, potato salad, homemade pickles, fruit salad, homemade baked beans

Tuesday – pizza/pasta – Homemade pizza with homemade turkey sausage, carrots- cooked and raw

Wednesday – super simple – Tacos – with taco meat from freezer, and veggies chopped ahead of time

Thursday – beef – Pasta with meat sauce, green beans

Friday – Sabbath Dinner – Baked chicken, mashed potatoes, salad

Italian Salad Dressing Mix

In my quest to make my own salad dressings, Italian is next on my list. Italian is my husbands favorite salad dressing. Well, not counting the ketchup and Miracle Whip salad dressing he grew up on and still likes to make. The kids won’t eat it, though. lol

I decided I wanted to start with a mix, so I could whip up the salad dressing quickly and easily when I need it. Here’s what I came  up with:

Ingredients
  • 2 Tablespoons Oregano, fresh or dried
  • 1 Teaspoon Basil, fresh or dried
  • 1/4 Teaspoon Thyme, fresh or dried
  • 1/2 Teaspoon dried Celery leaves
  • 1 Tablespoon Onion powder
  • 1 1/2 Teaspoons Garlic powder
  • 2 Tablespoons salt
  • 1 Teaspoon Pepper
  • 1 Tablespoon Sugar
Instructions
  1. Place all ingredients in an air tight container. I use a canning jar. Shake or stir.
  2. To make Salad Dressing:
  3. In a jar, I use a canning jar, place
  4. – 2 Tablespoons Water
  5. – 2 Tablespoons Italian Salad Dressing Mix
  6. – 1/4 cup vinegar
  7. – 1/2 cup Light Olive Oil
  8. Shake well before serving. It separates quickly, so shake often while serving. I make in a canning jar, so it’s easy to shake during the meal.
Notes

If you want a freshier, chunkier Italian Salad Dressing, use fresh herbs, onions, garlic and celery. Use your favorite vinegar and oil. I use about half apple cider vinegar and half white vinegar.

This mix makes it very convenient to make your own Italian Salad Dressing. My whole family loves this salad dressing. Even the kids! lol

Tater Tot Casserole

My family loves Tater Tot Casserole. I’ll eat it, but I’m not all that crazy about it. I’m also not thrilled with using canned cream soups in cooking. One of these days, I’ll experiment and make it from scratch, without the soups. For now, they love it, so we make it 2 or 3 times a year.

My son wanted to make it for dinner yesterday Fathers day. There must be a million and one recipes online for Tater Tot Casserole. I thought I’d share how I make it anyway. Might as well make it one million and two. lol

It’s really simple. Brown the hamburger, onions, and green peppers. Place in pan and top with tater tots.

Mix the milk and soup together. Pour over the tater tots.

Total time: 1 hour 20 mins
Ingredients
  • 1 lb Hamburger
  • 1/2 cup onions, diced
  • 1/2 cup green pepper, diced
  • 3 lb tater tots
  • 2 10 3/4 ounce cans cream of something soup (use your favorite, chicken, mushroom, cheese, etc.)
  • 1 can evaporated milk
Instructions
  1. Brown Hamburger. Cook onions and peppers until onions are translucent, either with hamburger or in separate pan.
  2. Place cooked hamburger, onions and green peppers in the bottom of a 13×9″ pan.
  3. Spread tater tots on top of hamburger.
  4. In a bowl, mix the milk and soups together.
  5. Pour evenly over tater tots.
  6. Bake at 350* for 1 hour.
Notes

Can use any cream of soup flavor you like.
Using thawed tater tots will reduce cooking time to about 30 minutes.
You can top with cheese before baking.
We usually double this recipe and bake in a large foil pan or two 9×13’s.

We weren’t able to have our Friday Night Fire cookout last week, so I was stumped as what to do with the hamburger. I came up with Hamburger Pie. Stop by and let me know what you think!

Sunday – soup & sandwich day – Egg sandwiches

Monday – chicken – Chicken Stir Fry

Tuesday – pizza/pasta – Spaghetti with meat sauce, green beans

Wednesday – super simple – leftovers

Thursday – beef – Hamburgers over fire, hot dogs, potato salad, Homemade Baked Beans, carrot sticks, S’mores!

Friday – Sabbath Dinner – Crockpot Chicken Cacciatore
